With this delicious recipe muffin in a multicooker shared with me Galina. Galina writes that the author of this recipe is a certain Frenchman who opened a chain of cafes in Riga with these cupcakes. And oddly enough, he shared the recipe on the magazine page. I halved the ingredients in half. the slow cooker holds a maximum of 6 muffins, and the recipe was given for 12 pieces. So whoever wants to bake muffins in the oven, increase the ingredients by 2.

Recipe Description

I suggest baking cupcakes in molds. Their recipe is very simple and does not contain wheat flour.

My child is allergic to wheat, so my sweet pastries are new and original 🙂 and that's why I came up with a recipe for cupcakes in paper cups with oatmeal.

I really liked the result, it turned out not only tasty, but also useful.

Wheat pastries, alas, often stick to the waist :), and we don’t need extra pounds! Baking from oatmeal is less high-calorie, but no less tasty.

I advise you to cook and this recipe will definitely be in your piggy bank of recipes.

To cook cupcakes in molds in a slow cooker you need:

For cupcakes:

  • 1 st. yogurt (kefir, sour cream).
  • 2 tbsp. Sahara.
  • 3 art. oatmeal.
  • 200 gr. cottage cheese.
  • 3 - 4 eggs (depending on the size of the eggs).
  • 0.5 st. sunflower oil (refined).
  • 1 tsp soda.
  • 150 gr. raisins.
  • A pinch of salt.
  • Vanilla.

I used a glass with a capacity of 150 grams, but you can use any measuring container that is convenient for you. We do not violate proportions.

For cream:

  • Sour cream of medium fat content - 1 cup.
  • Sugar - 1 glass.

Cooking step by step:

How to make cupcakes in molds?
Let's start by preparing the dough.
Beat eggs with sugar until white foam.

Add salt, vanilla and soda to the eggs. We mix.

Next, pour in kefir and oil - mix everything well until a homogeneous mass is formed.
We add cottage cheese. Cottage cheese can be pre-ground through a sieve or break all the lumps in it with a blender. I add as is - I prefer it that way.
And mix everything again.

Now add flour - little by little so that there are no lumps left.
The last ingredient will be raisins. It must be rolled in flour, and only then added to the dough.
The dough may seem watery to you, but don't worry, the oatmeal in the dough will swell a little.
To do this, let the test stand for 10 - 15 minutes.

We put paper molds for cupcakes in the capacity of the multicooker and pour a little dough into each, a little more than half of the mold.
We close the multi lid and turn on the "Baking" mode for 30-40 minutes.
While the cupcakes are baking, prepare a sweet cream for them: beat the sour cream with sugar until it dissolves and, while waiting for the cupcakes, send it to the refrigerator.

Putting a plate of chocolate muffins on the table, I experienced a somewhat strange feeling: could I really bake such small muffins in a slow cooker ?! The more I master the capabilities of my multi-assistant, the more I am convinced that a multi-cooker in the kitchen of a modern woman can easily replace a stove, a double boiler, and an oven. Skillfully using the modes that the miracle saucepan is equipped with, you can easily cook cereals, casseroles, first and second courses, cook various drinks and bake wonderful pastries, starting with a banal apple charlotte and ending with fragrant lush bread.

Personally, this recipe bribed me with the complete absence of fat in the dough, which means that the calorie content of the finished product is low, which allows us girls to treat ourselves to a delicious dessert with a cup of coffee without agonizing conscience. It will also be relevant in situations where proteins need to be disposed of, so I think many housewives will take note of it.

Ingredients:

  • 3 eggs (or rather 3 proteins)
  • 0.5 cup sugar
  • 1/3 cup flour
  • 1 tbsp cocoa
  • a pinch of vanillin (can be replaced with vanilla sugar)
  • a pinch of salt

How to make muffins in a slow cooker

To make chocolate muffins, you only need whites, so the first thing I do is separate the whites from the yolks.

I note that it is important that the eggs are cold, so the whites will beat better. Then immediately pour them into a bowl, add a pinch of salt and only lightly beat at medium speed with a mixer until soft peaks appear.

Now I increase the speed and, without stopping whipping, gradually add all the sugar little by little. Beat egg whites with sugar until stiff peaks form.

In a separate bowl, sift flour with cocoa and vanillin,

then carefully, folding movements, with a wooden spatula, mix the dry flour mixture into the protein mass.

I lay out the finished dough in silicone molds, filling only 2/3 of the molds, as it will rise during baking.

I put the blanks in the multicooker bowl and start the “oven” program with a temperature regime of 150 degrees.

After 30 minutes, the chocolate muffins are ready (I check the readiness by piercing with a wooden stick).

I am a terrible chocolate lover, so I decided to decorate the cupcakes with chocolate icing, which I prepared while the pastries were cooling. I will not describe the process of making the glaze, you can easily find it on this wonderful culinary site.

I pour the cooled cupcakes with icing, sprinkle with confectionery sprinkles, decorate with mint leaves and serve for tea drinking.

The experiment was a success!

Silicone molds are increasingly being used in the slow cooker. Two questions arise: how to use them, and is silicone harmful?

The slow cooker has recently become a very popular household appliance. It replaces a lot of utensils when cooking and greatly simplifies the cooking process. For those who are fond of baking, many models of modern multicookers have a baking mode. You can easily make a cupcake, pie or biscuit.

Of course, you can load the dough just like that, but if you want to get beautiful and regular-shaped pastries, you can safely use silicone baking molds.

Do not worry about the heat resistance of silicone molds. They are able to withstand temperatures from forty degrees below zero to 220 degrees Celsius. Therefore, the slow cooker will not melt or damage the mold.

The main thing is to set the temperature correctly. If you are using a silicone mold for the first time, it must be thoroughly washed with soap and water, wiped dry and greased with a small amount of butter. This is not required for further use. Silicone molds should be checked for damage before baking so that the dough does not run out of the edges and ruin the food processor.

How to use silicone molds?

  • Option 1

Put the molds directly into the multicooker bowl, and bake as usual according to the recipe. It is recommended to pre-lubricate the multicooker bowl with refined vegetable oil.

  • Option 2

Filled silicone molds are placed in the steam tray. In this case, cook in the "steam" mode.

A simple recipe for baking in a Redmond slow cooker is cupcakes. For them, you need to take special silicone molds to get the same confectionery. For the dough, you will need a pack of butter, two chicken eggs, two glasses of flour, a bag of baking powder and one glass of sugar. You can also add vanilla, cinnamon, chocolate for taste, and decorate the finished cake with powdered sugar.

By the way, for kneading dough, you can use a spiral mixer. Usually they are used for industrial baking in catering establishments and bakeries, but at home any housewife will be happy with such an assistant.

As with any recipe, mix all the ingredients in a bowl and work thoroughly with a mixer to achieve a homogeneous mass. You can complete the mixing process with your hands or with a spoon so that the dough for cupcakes becomes quite thick and plastic. The finished dough must be divided into several balls, which are laid out in silicone molds.

These forms can be put in a slow cooker and baked for about an hour in the "Baking" mode. After the cupcakes are ready, you can take them out and decorate as you wish.

When cooking and baking products in a silicone mold in a slow cooker, about 600 ml of water should be poured into the bowl of the appliance. Baking will take place on steam and the water will gradually evaporate. After baking is completed, it is necessary to put the finished products on a plate, and wash the molds well and clean them from the remnants of fat or dough. You also need to inspect the slow cooker and check if there are any particles of the flour product left inside.

Are silicone molds harmful?

It is important to buy high quality silicone molds. Pay attention to the fact that the mold manufacturer is a decent company, and the price of the product is not too low. For complete safety, you must be sure that your molds are made from high quality medical grade silicone.

On the other hand, there are a lot of low-quality technical silicone products on sale. When heated, they release substances hazardous to health. One way to tell if a silicone is bad is to pay attention to the color and smell.
