Sharp carrot. These are variations on the theme of “Korean-style carrots”. Three carrots on a grater with garlic and ground black pepper, coriander, and other spicy hot spices, season with sour cream or vegetable oil.

Radish with carrots. Three grated radishes with carrots, salt and season with sour cream.

Avocado with cheese and garlic. Three grated 1-2 medium avocados, 150 gr. cheese, 2-3 cloves of garlic, salt, season with sour cream or mayonnaise.

Available cutting options: cheese, sausage, cucumbers, tomatoes, sweet peppers.

Pancakes with various "economical" fillings. We wrap various fillings in thin pancakes: finely chopped or grated boiled eggs, rice with fried onions; liver with onions and eggs; mashed potatoes with mushrooms and fried onions; cheese with mushrooms; sliced ​​boiled sausage with mushrooms and cheese.

Salad with biscuits "Fish". Lay out in layers: “fish” cookies, coat with mayonnaise, grated smoked cheese (“Sausage”), finely chopped chicken breast with green onions, 3 finely grated eggs, a layer of mayonnaise. It is better to let it brew in the refrigerator for 2-3 hours so that the cookies are “soaked”.

Salad with fresh vegetables and herbs:
Option 1: young cabbage, cucumber, dill, green onion, sour cream, salt.
Option 2: cucumber, radish, 2 finely chopped eggs, lots of herbs, salt, sour cream.
Option 3: cucumber, tomato, sweet pepper, cheese, onion, herbs, salt, sour cream.
Option 4: chicken breast or ham, cheese, bell peppers, tomatoes, 2 boiled eggs, salt, ground pepper, sour cream or mayonnaise.

Tomatoes with cheese and garlic. Cut the tomatoes into rings, put grated cheese with garlic and mayonnaise on top.

Liver plates. We make a liver pate: 0.5 kg of boiled or fried liver, 1 carrot, 1 onion, 0.5 packs of plums. oils, salt and spices to taste. Scroll the liver with vegetables in a meat grinder, mix everything. Then put on "wheat plates", tartlets or bread.

Salo. Salo can be used both as a cut, and make a kind of snack by chopping it together with garlic and pepper in a meat grinder. Then spread this mixture on bread. It turns out especially tasty if such sandwiches are slightly warmed over a fire on a grate.

It is more economical when using an abundance of seasonal ingredients: in the presence of freshly picked or canned, frozen mushrooms, we cook dishes with them, in the season of an abundance of fresh vegetables, we use them to the maximum, etc.

Chicken breast fritters. Finely chop the raw chicken breast, 1 onion, salt, pepper, mix with mayonnaise and fry in a pan.

Chicken cutlets. We scroll the chicken breast, add a small piece of bacon or pork, 2 eggs, salt, pepper, a little milk, bread or potatoes. Mix thoroughly and fry.

Liver pancakes. Grind 0.5 kg of chicken liver in a meat grinder or blender, 1-2 eggs, 2 tbsp. spoons of milk, onion, 100-200 gr. flour. Mix thoroughly until thick sour cream and spread the pancakes on a preheated pan.

Fish in sauce. Ingredients: 3 large pollock, 1 carrot, 1 onion, 100 gr. milk, 2 tbsp. spoons of sour cream, salt, pepper. Put the fish in a hot pan, fry on both sides, add chopped carrots and onions, simmer for 5 minutes, add milk, sour cream, seasoning, simmer for another 5-10 minutes.

Boiled rice with fried mushrooms. Separately, cook the rice and fry the mushrooms with onions, then mix or spread the mushrooms on top of the rice.

Chicken wings baked in the oven. A few hours before baking, soak chicken wings in sauce: sour cream or mayonnaise, salt, pepper, spicy seasoning. Then spread on a baking sheet and bake until crispy.

Potato casserole. We wrap it in thin pita bread, laying it out in layers: mashed potatoes, minced meat or stew, fried onions, cheese, sour cream.

Warm meat salad. Fry separately: finely chopped chicken breast, a little beef and vegetables: eggplant, zucchini, onions. We spread it on a plate, serve crusty.

Homemade cakes are much cheaper and more natural than purchased ones.

Biscuit pie with apples. Beat 5-6 eggs and 150-200 gr. sugar, add 100 gr. flour, the dough should be like liquid sour cream. Cut 2 medium apples into a baking dish, spread the dough and bake for 30 minutes.

Pie based cake. Based on this cake, you can make a cake. We cut the cake into several layers, coat with cream, add soaked dried fruits, marmalade, berries, pour chocolate icing.

Long before December 31, we are looking for, and, of course, we are compiling a menu for the New Year's table. After all, you want to please both family and friends. Hostesses are tormented by the question: what to cook new and interesting for the New Year's table? And the answer is found on the Internet.

The most important dish that every hostess wants to surprise guests with is a hot dish on the festive table of meat, fish or poultry. Such a dish should be not only tasty, but also especially beautiful, because the holiday is the same. If the company is large, and you are going to celebrate for a long time, then you can cook several hot dishes.

In this collection, I decided to group interesting and delicious recipes for hot dishes on the festive table for all tastes, so that it would be easier for housewives to choose. We will consider meat, fish and chicken dishes. All of them deserve attention and will surely decorate your holiday table.

This recipe is good because the meat can be boiled and prepared for baking in advance, 1-2 days in advance, then stored in the refrigerator and baked before the guests arrive.

  • - back part of the pork carcass - ham with skin and bone - 3-5 kg
  • - Dijon mustard with grains - 2 tbsp. l.
  • - soy sauce - 2 tbsp. l.
  • - Worcestershire sauce - 2 tbsp. l.
  • - coriander seeds - 1 tbsp. l.
  • - cloves - 25-30 pcs.
  • - maple syrup (can be replaced with honey) - 200 ml.
  • - cinnamon stick - 1 pc.
  • - bay leaf - 4 pcs.
  • - black peppercorns - 1 tbsp. l.

We wash the meat ham well and put it whole for cooking in a large saucepan. Pour cold water on top, add cinnamon stick, black pepper and bay leaf. After boiling, cook over moderate heat for 2 hours. Periodically check that the meat is completely covered with water, if necessary add hot boiled water. Don't forget to skim off the foam.

Take the meat out of the broth. The broth can be used for soup, vegetable stew or frozen. Now carefully separate the skin, leaving the fatty layer.

Now, with a sharp knife, we draw transverse lines on the fat to make rhombuses. Insert a carnation into the corners of the intersection of the lines.

This semi-finished product can be prepared in advance and stored for up to 2 days in the refrigerator.

Let's prepare the frosting. Mix maple syrup (honey), mustard, Worcestershire sauce and soy sauce.

We put the ham in a heat-resistant dish, coat it with a brush (we use 1/2 of the glaze). Bake in the oven at 190°C for 15 minutes. Then again coat with the remaining glaze and bake for another 40 minutes. When baking, it is advisable to water the meat with the resulting juice.

This beauty can be served both hot and cold.

Pork ham in the oven with cranberry syrup


The second, no less delicious, glazed ham recipe, which is perfect for a festive table, can be prepared with cranberry syrup.

For this dish we need:

  • - pork ham - 2-2.5 kg.
  • - cranberries - 300 gr.
  • - canned apricots - 400 gr.
  • - brown sugar - 100 gr.
  • - port wine - 70 ml.
  • - bay leaf - 4 pcs.
  • - cloves - 20 pcs.
  • - peppercorns - 1 tsp

Soak the ham in cold water for 6-8 hours, drain the water, and transfer the ham to a saucepan and fill it with fresh water. Bring the water to a boil, drain again and fill with cold water again. We put bay leaves and pepper in the broth, and cook over low heat for 30 minutes. Making cranberry frosting. To do this, boil the cranberries with sugar in 150 ml of water (about 5 minutes), remove the cranberries from the syrup, and cook the syrup for another 1 minute. We pour port wine into it.

Further, the procedure is the same as in the first recipe. Cut off the skin from the ham. On the fat layer we make grooves with rhombuses. Insert carnations at the intersections of the lines. Lubricate the ham with ½ syrup and bake in the oven at 190 ° C for 45 minutes. Brush with the remaining half of the syrup and bake for another 1 hour. When serving, decorate with cranberries, lettuce or apricot halves.

English Roast Lamb with Rosemary


Lamb is a valuable and nutritious meat, in which there is 3 times less fat than pork, and 4 times less cholesterol. Therefore, for those who do not want to gain extra pounds over the holidays, this recipe is suitable.

We will need:

  • - lamb - 1 kg.
  • - onions - 4 pcs.
  • - potatoes - 800 gr.
  • - tomato sauce - 3 tbsp. l.
  • - garlic - 3-4 cloves
  • - vegetable oil - 2-3 tbsp.
  • - salt, pepper, spices for meat, rosemary
  • - greenery

We cut the meat into medium pieces and marinate - salt, pepper, sprinkle with spices, put a few sprigs of rosemary and leave for an hour.

Then everything is very simple - we place the meat in a baking dish. Top with thinly sliced ​​potatoes and onion, cut into half rings. Salt, pepper. Finely chop the garlic and herbs and sprinkle on top.

In conclusion, pour lamb with tomato sauce, slightly diluted with water. Bake in the oven at 180°C for about 2 hours.

Pork rolls with prunes

Ingredients:

Soak prunes in hot water for about 30 minutes, after which we drain the water, and put the prunes on a paper towel to dry.

In a heated frying pan in vegetable oil, fry each piece on both sides until golden brown. Then put them on a baking sheet and bake in an oven preheated to 180 ° C for 15 minutes.

  • - champignons - 400 gr.
  • - hard cheese - 200 gr.
  • - onion - 2 pcs.
  • - eggs - 4 pcs.
  • - potatoes - 6 pcs.
  • - parsley - 1 bunch
  • - wheat flour - 1 cup
  • - vegetable oil - 2 tbsp.
  • - salt, pepper and seasonings for meat

We cut the meat across into pieces 7-8 mm thick. We beat off each piece with a hammer on both sides. Salt, pepper and sprinkle the meat with seasonings (Provencal herbs are well suited).

We are preparing the stuffing. We cut the onion into cubes. We clean the mushrooms and also cut into cubes. Fry onions and mushrooms in a pan with vegetable oil. Cool the filling a little and add grated cheese and finely chopped greens, salt and pepper.

In this recipe, the meat must be pre-cut into portions and marinated. To do this, put the meat in pieces in a bowl, salt, pepper, sprinkle with seasonings. Squeeze juice from 2 oranges, mix with half a serving of olive oil, pour meat with this marinade and leave for 4 hours.

Now we take out each piece of meat from the marinade, wring it out a little and fry in a pan until golden brown on both sides.

We put the meat in a baking dish, put a piece vertically, and put the oranges cut into circles between the meat. Oranges can be peeled if desired. Fill this beauty with marinade and bake in the oven at a temperature of 190 ° C for 40 minutes.

Salmon in cream sauce with caviar

A very colorful dish, looks gorgeous on the festive New Year's table. Your guests will surely appreciate it. After all, a holiday is not real without caviar, so I recommend this dish to your New Year's table.


Ingredients:

  • - salmon (can be replaced with salmon) - 1 kg
  • - spices provencal herbs
  • - vegetable oil
  • salt, pepper to taste

for the sauce:

  • - cream 20% - 200 ml.
  • - turmeric or curry powder - 2 tsp.
  • - parsley - 2 tsp.
  • - red caviar - 2 tbsp. l.

Cut the fish into portions. Salt, pepper, sprinkle with herbs. Put the fish in a baking dish.

Prepare cream sauce. Mix cream and chopped parsley. Pour turmeric into the cream and mix well until smooth. Add caviar to the sauce.

Pour this sauce over the fish and put in a preheated oven. Bake at a temperature of 200 ° C oven for 15 - 20 minutes.

A stunningly beautiful dish. Of course, it requires certain skills and labor, but the dish is worth it.

We will need:

  • - pike - about 1 kg
  • - white bread - 100 gr.
  • - milk - 1 cup
  • - 1 egg
  • - bow - 3 pcs.
  • - mayonnaise - 2 tbsp. l.
  • - greens - to taste
  • - salt pepper

We split the fish. We clean, the carcass should remain intact, do not cut off the fins. Cut off the head, remove the gills. Now the most difficult thing is to carefully remove the skin, for this we carefully cut the meat in a circle with a sharp knife, trying not to damage the skin.

We cut off the bone at the base of the tail and take out the pulp. Separate the fish fillet from the bones.

Preparing stuffing for pike. Soak white bread in milk. We scroll the fish fillet through a meat grinder (I ground it in a blender for speed). In a blender, we also chop the onion and bread, add salt, pepper to taste, beat in 1 egg.

Mix all ingredients thoroughly until smooth.

Now we very carefully stuff the pike with minced fish, trying not to damage the skin.

We spread foil on a baking sheet, grease with vegetable oil and lay the fish. We attach the head. Coat the fish with mayonnaise. We wrap the foil and bake in the oven for about an hour at a temperature of 180 ° C.

Now decorate the pike and wait for compliments from the guests.

Carp on an onion pillow, baked in the oven

For this dish, a larger mirror carp is desirable. And do not spare the onion, then you will get a delicious hot dish.


Ingredients:

  • - mirror carp - 2 kg
  • - onion - 5 heads

Salt the carp, pepper and sprinkle with ground seasonings. We spread the carp on the onion pillow and grease the carcass with vegetable oil.

Lubricate the belly of the carp from the inside with 2 t.l. mayonnaise, put inside bunches of dill and parsley. If desired, you can pour lemon juice on top of the fish.

Place the carp on a baking sheet and bake at 180 ° C for about 1 hour.

Beat the egg, add some salt. Remove the carp from the oven and brush with ½ of the egg mixture. Then bake for another 10 minutes and brush again with the remaining mixture. When the carp is beautifully browned, we take it out of the oven, decorate the dish and surprise the guests.

Oven baked fish with mayonnaise


Low-fat and even dryish fish is suitable for such a dish, its taste will wonderfully reveal itself under a cheese and vegetable pillow.

We will need:

  • - fish - 1 kg.
  • - carrots - 2 pcs.
  • - onion - 2 pcs.
  • - cheese - 200 gr.
  • - mayonnaise - 150 gr.

And now we lay it in layers according to the principle of meat in French:

1st layer - put the fish in the form

2nd layer - cut onions in half rings

3rd layer - three carrots on a coarse grater

4th layer - three again on a coarse grater cheese

And in the end we coat it all with mayonnaise.

We send it to the oven preheated at 190 ͦ C and bake for about 30 minutes. When you see a delicious orange crust, the fish is ready.

Poultry dishes

Duck with apples

For a small company, duck with apples is a very tasty and festive dish. Yes, and it cooks much faster than a goose. But keep in mind that there is not very much meat at the exit. Consider the number of guests and if there are more than four, then buy two or more carcasses.

We will need:

  • - duck - 1 pc.
  • - apples - 3 - 4 pcs.
  • - lemon - 1 pc.
  • - sour cream - 80 gr.
  • - salt, pepper, spices for poultry
  • - cinnamon to taste

Gut the duck, rinse and pat dry with paper towels.

Rub the carcass with salt, pepper and seasonings.

Cut apples into large slices, lemon into slices, sprinkle all this with cinnamon and put inside the carcass.

Sew up the hole, coat the carcass with sour cream on all sides. Put the duck on a baking sheet breast down and bake in the oven for about 1.5 hours.

Festive goose with apples

The goose is designed for a larger company, the average weight of a goose is 4-5 kg, and the cooking time also increases accordingly. But it is necessary to marinate and prepare the goose for baking in a day.

  • - apples - 1 kg
  • - lemon - 1 pc.
  • - apricot jam - 100 gr.
  • - salt, pepper to taste
  • - garlic - 3-4 cloves
  • vegetable or corn oil - 50 ml.

Do not forget that the goose is baked for a long time, so start cooking it about 5-6 hours before the guests arrive.

The goose must first be gutted, rinsed with cool water. Prick the skin in several places with a needle. Now it is desirable to scald the goose with boiling water.

Rub the carcass with salt, pepper and garlic and send it to the refrigerator for a day.

We cut the apples into large slices and stuff the carcass with them.

In order for the goose to keep its shape, we tie the legs and tie the goose with a thread so as to pull off the wings.

Lubricate the carcass with vegetable oil.

If you find a large baking sleeve, it is best to bake in it. But if there is no sleeve, then you can cover the carcass on top with foil.

New Year's turkey with oranges

In Europe, England and America, a very popular Christmas dish is a baked turkey. The whole family is looking forward to this miracle of cooking from the hostess. Let's try to please our loved ones.


We will need:

  • - turkey - (5-6 kg.)
  • - oranges - 3 pcs.
  • - apples - 2 pcs.
  • - onion - 1 pc.
  • - fresh or frozen lingonberries - 50 gr.
  • - chopped bacon - 150 gr.
  • - salt, pepper to taste
  • - garlic - 1 head
  • - rosemary, thyme - a few sprigs
  • - butter - 250 gr.
  • - vegetable or olive oil - 1 tbsp. l.

Gut the turkey, rinse and pat dry with paper towels. Salt and pepper.

Now we will prepare the oil for rubbing the turkey, which will make the dish juicy and fragrant. Salt and pepper room temperature butter, add olive oil (although I prefer vegetable oil) and garlic passed through a press. Squeeze juice from one orange, and grate the zest on a fine grater and also add to the oil. Add herb leaves to this as well.

Now, in the upper part of the breast, lift the skin and put some of the spicy oil into the formed pocket. Do the same procedure with the lower part of the breast and with the legs. This should take half the oil. Rub the remaining half of the oil into the skin of the turkey. Salt and pepper the top of the carcass and drizzle with a little olive oil.

Wrap the turkey in foil and marinate in the refrigerator for at least 2 hours.

Cut oranges, apples and onions into 4 parts, cut the head of garlic in half crosswise. Stuff the turkey with this, add more spicy herbs of rosemary, thyme. Place the bird in a baking dish and cover with foil.

We bake the bird at a temperature of 220 ° C for about 30 minutes and pour over the resulting juice.

Lay the bacon slices on the turkey breast, pour over the juice again and bake at 180° for about 3 hours, basting occasionally with the juice. Serve with hot turkey sauce and cranberries. You can make lingonberry sauce if you like.

The easiest and fastest dish for a festive table is chicken baked in a sleeve. It turns out a hearty, healthy and beautiful treat, even novice housewives can cook this.

We will need:

  • - chicken - 1 pc.
  • - prunes - 100 - 150 gr.
  • - dried apricots - 100-150 gr.
  • - garlic - 2-3 cloves
  • - salt, black pepper to taste

We will roast the whole chicken.

It needs to be marinated first. I advise you to marinate for a day, if possible. Then the chicken is saturated with seasonings and becomes especially soft and juicy.

Pour prunes and dried apricots with hot water for 10-15 minutes until softened. We stuff a whole chicken carcass with dried fruits.

We measure the desired length of the sleeve, on one side we tie the sleeve with a knot, put our chicken there, and fix the other end with a clothespin.

Bake for 40 minutes at a temperature of 180-190 ° C.

If you want to get a golden crust, 15 minutes before cooking, cut the top of the sleeve and fold back a little edge.
