Italian sandwiches - bruschetta and crostini. Dried bread, rubbed with garlic and seasoned with butter. At first it was food for the peasants who worked in the fields. Gradually, bruschetta began to be decorated with various additives and it became everyone's favorite snack.
How do the Italians prepare it? Slices of bread, dried on a grill or a frying pan without oil, are rubbed with garlic and poured with olive oil. Then decorate to taste: tomatoes, mozzarella and basil, olives and artichokes, mushrooms, smoked salmon, anchovies ... Very tasty bruschetta with tuna or truffle sauce, salsicchi sausages made from fresh minced meat with scamorza cheese. But the most beloved by Italians is bruschetta with chopped tomatoes.



For bruschetta, bread is dried, and for crostini, you can take fresh bread.
The most delicious are obtained with a baguette, but it takes skill to cut a soft baguette into even beautiful pieces. Not thin, 3-4 centimeters thick just right. For other, less "wet" crostini, you can use specially prepared and already sliced ​​toast bread.

How to cook bruschetta with tomato and mozzarella


Cut the baguette into even slices. Then, in a hot pan, brown the baguette pieces (WITHOUT OIL!) to become beautiful, so slightly “tanned”, but not burnt and remain soft inside.
Whoever loves, gently rubs garlic on top - lightly, more for smell, trying not to break the bread.
It is better to chop the garlic beforehand - it is easier to rub, and then just shake it off the bread.
Drizzle the bread slices with olive oil on top.



Lay out on a beautiful dish, lay pre-finely chopped tomatoes on top.
Try not to put together with tomato juice - the bread will get wet and become tasteless.
Therefore, it is better to cook crostini immediately before serving - so that they do not stand and become limp.
Sprinkle a little ground black pepper. In principle, you can already eat.



But if there is mozzarella cheese, cut it and put it on top of the tomatoes.
You can put on top and a leaf of arugula, or lettuce - at your discretion.

Bruschetta recipe with mushroom pate

Bruschetta is a traditional Italian appetizer, the mushroom pâté option is great for treating friends and family. The dish is ideal for breakfast, perfect for a festive table. Only butter must be of excellent quality, such as EcoMilk butter.

Compound:
Champignons - 125 gr
Onion - 1 pc.
Butter "EcoMilk" - 75 gr
Walnuts - a handful
Chicken egg - 1 pc.
Cognac - 0.5 tsp (optional)
Salt to taste
Black pepper freshly ground to taste

For submission:
Baguette
Green onion

Cooking:



Wash mushrooms in cold water. Cut into thin slices.



Peel the onion and cut into half rings. Dissolve 20 g of butter in a frying pan, simmer the onion for 5 minutes.
Add mushrooms to the onion, fry over moderate heat for 10 minutes.




Let the mushrooms cool. Add the hard-boiled chicken egg, walnuts, and the remaining softened butter to the mushrooms and onions.


Blend with a blender until smooth. Add salt and pepper to taste. Add cognac as desired. Mix. Place in refrigerator for at least 1 hour.



Cut the baguette, fry the slices in a dry frying pan. Spread with pate, sprinkle with green onions.

Bruschetta with eggplant caviar and cheese

Compound:
Eggplant - 2 pcs.
Sweet pepper - 1 pc. (half red and yellow)
Tomatoes - 2 pcs.
Red onion - 1 pc.
Parsley - a few sprigs
Aromatic vegetable oil - to taste
Salt - to taste
Black pepper - to taste
Brynza - 50 g.
Baguette - 5 slices

Cooking:
Prick the eggplant with a fork. Put eggplants and peppers on a baking sheet and bake in an oven preheated to 180C until scorched.



Remove the skin from the tomatoes, remove the seeds and chop finely, peel the onion and chop finely. Chop the parsley.




Peel the eggplant and peppers and finely chop.



Mix all vegetables in a bowl, add parsley, salt, pepper and oil. Stir and refrigerate for 1 hour.


Dry the baguette slices, break the cheese into pieces. Put caviar on a baguette, put a few pieces of cheese on top. Bon appetit!

Crostini with avocado

Compound:
Avocado
Grilled chicken
Bacon
Baguette or any bread of your choice
Parmesan cheese, thinly sliced

Cooking:


We clean the avocado from the skin, take out the stone. Grind the pulp in a blender.


Finely chop the chicken along with the skin.


Fry the bacon slices in a frying pan. We grind them.

- avocado puree
- top-sliced ​​chicken
- slices of cheese

New Year's sandwiches "Dogs"

Very cute sandwiches for the festive table, which can be prepared with the children. They will decorate your New Year's table. For spreading the sandwiches themselves, you can take canned fish instead of curd cheese.


Compound:
Creamy curd cheese - 100 gr
Curd cheese with greens - 100 gr
Boiled egg - 1 pc.
Olives - for decoration
Ham - for decoration
Bread - 2 slices
Salt - to taste
Parsley - for decoration

Cooking:



Divide the egg into yolk and white and grate separately on the smallest grater.



Mix curd cheese without additives with grated protein. If you wish, you can salt.



Spread curd cheese with herbs in a thin layer on bread. If the greens in the cheese do not look very bright, then add parsley in addition. Canned fish can be used here instead of curd cheese.



With a toothpick, draw the intended outline of the dog's faces and fill them with the prepared mass of white cheese with protein. Also determine where the ears and the protruding part of the muzzles will be.



Then sprinkle with yolk the middle part up to the contour of the ears and the part that was marked. The muzzles of dogs are voluminous.



By the same principle, make a second sandwich, or how many pieces you decide to cook. You can decorate with parsley or dill leaves and serve “Dogs” sandwiches to the table. Bon appetit!
