Ingredients:

  • Beef - 400 gr.;
  • Pork - 200 gr.;

Sometimes it happens that homemade dumplings do not turn out juicy. The mince seems to be dry. Someone says that this is due to a small amount of onions or a small amount of fat, that is, the pork was lean. This recipe is unusual, but according to it, the food always turns out to be very juicy.

Ingredients:

  • Beef - 300 gr.;
  • Pork - 200 gr.;
  • Onion - 2 pcs.;
  • Garlic - 5 cloves;
  • Salt, pepper - to taste;
  • Water - 1 glass;
  • Bay leaf - 2 pcs.;
  • Dough.

Cooking:

1. First, let's freeze the water, since we need ice. Therefore, a glass of ice is poured into a mold and frozen in the freezer.

2. We cut the meat and twist it in a meat grinder along with onions and garlic. Salt and pepper.

3. Crush the ice into small pieces and add to the minced meat. It is he who will give the dish juiciness. Since, if you add water to minced meat, then when sculpting it will be liquid and the dough will become sour.

So that the ice does not melt in the minced meat when making dumplings, we put it in the refrigerator and use it in small portions.

It is clear that minced meat releases juice and dumplings are already obtained with broth. But only very little of it, and in some cases not at all. To make the broth, I suggest making them according to this recipe. Many call them "bulmen".

Ingredients:

  • Pork - 100 gr.;
  • Beef - 200 gr.;
  • Onion - 1 pc.;
  • Butter - 50 gr.;
  • Salt, pepper 0 to taste;
  • Dough.

Cooking:

1. Prepare minced meat from meat. To do this, twist the pork and beef in a meat grinder along with onions. Salt and pepper to taste. Mix thoroughly.

In order for the stuffing to turn out homogeneous, it must be knocked out. Pick it up and throw it back on the table. Do this about 10 times.

  • Minced meat - 300 gr.;

Cooking:

1. You can take any minced meat to your taste. I took the homemade pork and beef.

2. The amount of cabbage you need to watch the fork and minced meat. If the fork is large, then only part of it will be needed. There should be as much cabbage as minced meat. That is 1:1.

We cut it as you like: straws or cubes. It is desirable to be smaller so that it has time to cook. Therefore, I usually cut it into thin straws, and then I chop the straws more. Then I'm sure she'll be ready.

I mix cabbage with minced meat. Then salt and pepper. You can add any seasoning. Mix into a homogeneous mass.

3. Roll out a large pancake from the dough and use a pile to make small circles. I put minced meat on each and stick it in a dumpling.

This dish can be boiled and eaten right away, or you can freeze and take it out as needed.

Cooking:

1. We clean the onion and cut it into cubes. Fry it until golden brown in a pan with vegetable oil.

2. Mushrooms (champignons or any that you have) are also cut into small cubes and sent to fry with onions. Salt a little. When they are fried, they need to cool a little.

3. While the vegetables are cooking, prepare the minced meat. To do this, wash the meat and dry it. Cut into pieces and twist in a meat grinder.

4. Put the mushrooms with onions in the minced meat. Add salt and pepper to taste. Mix until smooth.

5. Cut off a little flour mass and twist into a sausage.

To prevent the rest of the dough from becoming covered with a hard crust, it must be covered with a bag, towel or saucepan.

Cut into small pieces and roll with a rolling pin into small circles.

6. Put the minced meat in the middle of the workpiece and interlock along the edges, and connect the ends. All molded dumplings can be frozen and boiled whenever you want.

You can serve them with sour cream or your favorite sauce.
