Culinary competition “Discover the taste of science.

As part of the SkyService 2017 International Forum, which will be held on April 26-27 in Gostiny Dvor, chefs from the world's leading catering companies that develop menus and prepare dishes for air passengers will demonstrate their skills and compete for the title of the best. The SKY DELIGHT AWARDS 2017 (International Culinary Competition) is organized by CJSC Aeromar and will be held for the first time on April 26 with the support of the Russian National Culinary Association (NACR).

Under the terms of culinary competitions 10 chefs from different countries developing menus for such airlines as Aeroflot, Turkish Airlines, Air France, British Airways, SWISS and others will have to prepare 4 dishes in two categories:

  • For business class: cold appetizer or salad and hot dish,
  • For economy class cold appetizer or salad and a hot dish.
Each of the presented catering teams independently develops the menu and selects the products from which the competitive dishes will be prepared. Basic ingredients and sets of spices will be provided by the organizers, as well as the services of trainee assistants (students of culinary colleges), 1 person for each team. To complete the competition task, each team is given 90 minutes, according to its results, all four dishes must be served at the same time and presented to the jury for 2 minutes.

Special guests of the event will open the Prize and greet the participants of the competition: a famous restaurateur - Arkady Novikov and food writer and blogger Nika Belotserkovskaya.

The jury represented by Viktor Belyaev, President of the National Culinary Association of Russia, who had the honor to cook for M. Gandhi and M. Thatcher, as well as a panel of professional judges and chefs from Moscow restaurants, will evaluate dishes and award points in categories that are key for in-flight catering :

  • taste,
  • rational use of products,
  • the complexity of the dish and professional skill,
  • appearance,
  • the possibility of introducing dishes into on-board meals.
While the chefs will prepare the dishes, the carving masters will simultaneously cut out 10 letters from various products, which together form the name of the award: SKY DELIGHT.

On the second day of the Forum, April 27, the mood set by the competition will be supported by the leading chefs of Moscow restaurants and demonstrate their skills at open culinary master classes.

GO TO "BATTLE OF THE COOKERS - 2017"!

"Battle of Chefs" is a professional culinary competition, a spectacular show program dedicated to the art of cooking, a unique city-scale event created for young, ambitious professionals who are ready to prove to the general public that cooking is an art.

The first "Battle of the Chefs" took place on May 31, 2015 in one of the city's nightclubs. The best restaurants of our city put forward their teams, which competed for 1st place. There were also representatives from Vikhorevka and Ust-Kut. In total, 10 teams participated in the competition. The winner received a Certificate for participation in the professional culinary competition "Copper Frying Pan" (Irkutsk), which gives the opportunity to win a free internship at one of the best culinary schools in Moscow. The second Battle of the Chefs took place in April last year.

The project was nominated for the National Award in the field of event tourism "Russian Event Awards" in 2015, passed the Regional stage in the Siberian and Far Eastern Federal District, took 1st place and reached the final, which took place in Kazan on October 21-22. Only two projects reached the finals in the nomination "Best event in the field of gastronomic tourism" from the Siberian Federal District: "Battle of the Chefs" from Bratsk and "Siberian Hospitality" from Novosibirsk, both projects did not take prizes in the finals.

On May 26, 2017, the third “Battle of Chefs” will take place in Bratsk, and it is planned that the competition will become annual and regional. The organizers of the competition, as well as last year, were Aleksey and Natalia Domrachevy - Delo Vkusa Plus LLC (Restaurant "Rice and Dough", Culinary Studio "Pasta", Bratsk).

The jury of the competition this year included well-known chefs, professionals in their field, who have achieved visible results in their profession.

The jury this year was Maxim Syrnikov(St. Petersburg) - the most famous modern historian and practitioner of traditional Russian cuisine, author of the books "Real Russian Food" and "Real Russian Holidays". His website and blog on LiveJournal is dedicated to authentic national cuisine, one that, being part of traditional Russian culture, will help us not to get lost among the bright advertising of global fast food. Maxim travels all over the country and these are not just theoretical, ethnographic and historical trips and collecting material, this is a constant work in the kitchens of restaurants, holding master classes, organizing themed and charity dinners.

As participants, the restaurant Dom Rybaka (Irkutsk), an independent team from Krasnoyarsk and brothers have already submitted applications for today: the Munich restaurant, the Arsenal bar-karaoke, the Don Yapon delivery restaurant, the Taiga restaurant and the restaurant " Rice and Dough.

The competition will be held in two stages - "Homework" and "Final Competition". Homework: participants prepare a hot dish and a salad (the products of the participants are used, home-made preparations are allowed - peeled fruits and vegetables). Cooking time - 40 minutes, a minute is given for the presentation of the dish. In the final competition, participants will need to cook a hot dish of Siberian cuisine from the presented set of products in 40 minutes. A prerequisite for the Competition is that all dishes must be cooked in a frying pan, without the use of ovens and other heating equipment. From what the participants will cook their dishes until the last minute remains a mystery - the list of products is announced on the day of the "Battle of the Chefs" before the start of the "Qualifying Stage" and "Final".

When grading the participants, the originality of the recipe, taste, teamwork, presentation of dishes will be taken into account.

Restaurants and catering establishments of the Irkutsk region are invited to participate in the Competition - the team must apply for participation by filling out a questionnaire on the website bitvapovarov.ru.

The All-Russian culinary competition "Discover the Taste of Science!" has been announced. Deadline September 28, 2017.

Conditions of the competition

  • Prepare a dish that you think reflects the connection between science and food. It can be either your own recipe or a borrowed one.
  • Post a photo of this dish on Instagram or Vkontakte with the hashtags #culscience #StudyUK, give a recipe (in Russian) and an explanation or story (in English and Russian) in the description of the photo, how science helped in creating this dish or, for example, how it is associated with a particular scientist.
  • Access to the participant's account must be open for the duration of the competition and within 10 days after the end of the acceptance of works.
  • Mark the accounts of the British Council and the Culinary Studio of Yulia Vysotskaya in the photo on Instagram or in the caption to the text on Vkontakte, depending on where the work will be posted.

On January 13, 2017, in the building of the City Hall on Novy Arbat, the Svyato Danilov Patriarchal Monastery and the Center for the Revival of Traditions held 6th Youth Gastronomic Festival “Reviving Traditions. Christmas".

The partners in organizing the Festival were the National Culinary Association of Russia and the Culinary Association "Taste of the World Rus".

The aim of the project is to improve the professional skills of students of vocational schools and young professionals in the field of food culture and hospitality within the framework of the traditions of the Orthodox meal. The festival, which proclaimed the revival and preservation of Orthodox culinary traditions, encourages students to expand their horizons, improve their skills and comprehend the rich culture and folk traditions not only of their own country, but also of other Orthodox countries.

For the third time the Festival was held in the International format. The teams of the embassies of the Republic of Serbia in the Russian Federation, the Republic of Bulgaria in the Russian Federation, the Republic of Greece in the Russian Federation, the Republic of Cyprus in the Russian Federation, Romania and the Republic of Srpska laid tasting tables in accordance with their Christmas traditions.

The festival was opened by the head of the project “Reviving Traditions”, the cellar of the Svyato Danilov Patriarchal Monastery, Hieromonk Feognost, and the president of the NP “Center for the Revival of Traditions”, Anna Fyodorovna Karpinovich.

Each college had a team of 6 people. All nominations were prepared in the "Homework" format. Each nomination was evaluated by a separate professional jury, which included representatives of the Culinary Associations and the Guild of Chefs, well-known chefs, confectioners, bartenders, specialists from the Institute of the Baking Industry.

The jury evaluated the taste, appearance, technology and quality of preparation, the complexity of execution, design. A recipe was always presented, especially old and regional recipes were welcomed. As a whole, the author's ideas were evaluated.

Particular attention was paid to the knowledge of the history of the dish, the technology of its preparation and the ability to present their work to the jury.

The winners of the Festival are:

  • Moscow College of Management, Hotel Business and Information Technology "Tsaritsyno" - 2nd place
  • GBPOU "First Moscow Educational Complex" - 3rd place.

All the winners of the Festival were awarded diplomas of the Center for the Revival of Traditions, as well as, according to the established good tradition, professional gifts from the ATESI machine-building enterprise.

The Orthodox Rus movement and Belaya Dacha Trading CJSC, Robot Coupe SNC (France), Tambovsky Privoz Farm established and presented prizes of their sympathies.

As part of the Festival “Reviving traditions. Christmas ”a competition was organized for the best sketch of a cook’s costume for Santa Claus and the Snow Maiden among students of the College of Musical and Theater Arts named after. G.P. Vishnevskaya. The professional jury summed up the results and named the winners:

Moiseeva Ulyana - 3rd place.

The sketches of all the participants were exhibited in the hall where the Festival was held and attracted great attention from the public. In addition, mannequins with Russian costumes were exhibited in the hall, also made by the students of the College. G.P. Vishnevskaya. During the Festival, students of the art department made reportage sketches, which will soon be posted on the website of the Center for the Revival of Traditions.

An interesting component of the Festival “Reviving Traditions. Christmas ”was a school competition for table decoration. Two Moscow schools (1852 and 1015) presented two thematic tables. The winners were awarded the Festival.
