We cut the onion into cubes. Pour 3 tablespoons of oil into the pan, start the vegetable and start frying. We clean the carrots, rub and spread to the onion, fry together for a couple of minutes.

We wash the mushrooms, cut into small cubes and add to the pan. We bring mushrooms with vegetables almost to readiness. Salt a little at the end. Cool down to room temperature.

While the vegetables are cooling, we turn the liver through a meat grinder, but you can just kill it with a food processor. Add the egg with semolina here, stir and add the mushroom mass with vegetables. We put spices, stir. If suddenly the mass turns out to be liquidish, then you can pour a little flour, but no more than two tablespoons.

Let the test rest for ten minutes. Then we fry the liver pancakes simply in a pan with or without oil in the usual way.

When using other mushrooms instead of champignons, you need to boil them a little first. Only after that the product can be cut and fried with vegetables. This rule does not apply to oyster mushrooms. They, like champignons, can be immediately cut and fried.

Option 5: Liver pancakes with rice

The recipe for very satisfying liver pancakes, for which you need boiled rice. It is not necessary to cook it specially, you can take the leftovers from the side dish. But if there is nothing like that, then we cook. We take any kind of liver.

Ingredients:

  • 500 g of liver;
  • 2 tablespoons flour (with a slide);
  • oil and spices;
  • two eggs;
  • onion head;
  • 100 g rice (boiled).

How to cook

If the liver is beef or pork, then the offal must be soaked without fail. We simply cut the chicken liver and rinse well with cold water. We cut the peeled head of the onion, pour it to the liver and chop everything together.

Add eggs to the liver mass. If they are large, then one is enough. Salt, fall asleep boiled rice. For taste, you can add a clove of garlic to the pancakes, for sharpness and aroma, black ground pepper.

Mix well the liver mass and add a couple of tablespoons of flour. We knead the dough. If you want to make lush and thick pancakes, like cutlets, then you can add a little more flour and a couple of pinches of baking powder.

We heat a thin layer of oil in a wide frying pan, spread the pancakes with a spoon and bring to readiness. Serve hot.

In exactly the same way, liver pancakes with buckwheat are prepared. You can also cook it or take ready-made porridge, the amount can be increased or slightly reduced.

Option 6: Liver pancakes with gravy

These pancakes are designed to be served with a side dish, as they are stewed in gravy. There are many options for the sauce, this is one of the easiest to prepare based on sour cream. It has a universal taste, goes well with vegetables, cereals. We take sour cream with an average fat content of 20%.

Ingredients:

  • 0.5 kg of liver;
  • two eggs;
  • onion head;
  • 3 spoons of semolina;
  • 5 spoons of sour cream;
  • glass of water;
  • oil;
  • 1 st. l. flour for sauce;
  • herbs, spices.

How to cook

We skip the washed and, if necessary, soaked liver through a meat grinder, add semolina and chopped onion to it. Stir, leave for half an hour to swell.

Add eggs, spices, stir the liver dough thoroughly. Then spread with a spoon on a heated frying pan and fry ordinary pancakes in a small amount of oil.

In another pan, prepare the sour cream sauce. Pour a little oil and spread a spoonful of flour, warm it up a little in fat, add sour cream, stir quickly and pour in warm water. We put salt in the sauce, pepper. There should not be any lumps in the mass.

Pour the prepared pancakes with sauce, simmer for 5 minutes on the stove. Sprinkle with fresh herbs. You can chop it together with a few cloves of garlic, it will turn out even tastier.

You can cook tomato gravy from tomatoes or ready-made pasta with the addition of flour for liver pancakes. It also goes great with pancakes. It turns out even tastier if you add fried vegetables (onions, carrots, bell peppers).

Option 7: Oatmeal Liver Pancakes

Another recipe for very tasty, but economical and easy to prepare liver pancakes. For them, you can use any oatmeal that you can find in the kitchen. A recipe with steaming, that is, oatmeal will need to stand. This option is also distinguished by the addition of sour cream to the dough, which increases the yield of the dish.

Ingredients:

  • 0.5 kg of beef liver;
  • 0.5 st. flakes;
  • 4 spoons of sour cream;
  • small bulb;
  • two eggs;
  • 7-8 tablespoons of flour.

How to cook

Pour the oatmeal into a bowl, pour a glass of boiling water, leave for half an hour, let the cereal swell. Then it must be removed from the water. You can simply squeeze it with your hands or throw it into a colander, into a small strainer.

Scroll the liver and a small onion. You can additionally introduce half a carrot, it will not hurt. Add all the sour cream and eggs here at once, add the flour and stir the dough well.

Add oatmeal while continuing to stir. Leave the liver with them for five minutes to combine the ingredients.

We heat the oil in a frying pan with a flat bottom. We spread the liver dough with oatmeal, fry the pancakes until cooked.

Such pancakes can be served simply with sour cream, but it turns out to be much tastier when combined with sautéed vegetables or squash, beetroot caviar. You can put a circle of tomato on top of each cake, sprinkle with cheese and bake on a baking sheet in the oven.

Option 8: Liver Pancakes with Potatoes

This is an unusual, but very tasty recipe for fritters with raw potatoes. This means that you don't need to pre-cook anything. The number of medium-sized tubers is indicated, approximately 100-120 g each. Recipe for liver fritters without eggs.

Ingredients:

  • 0.5 kg of beef liver;
  • a spoonful of sour cream;
  • 3 potatoes;
  • 3 cloves of garlic;
  • onion head;
  • 5-7 tablespoons of flour;
  • oil and spices.

How to cook

Pass the onion and liver, peeled garlic cloves through a meat grinder into one bowl. You can grind them in another way.

Peel potatoes and finely grate. You can also pass it through a meat grinder, but only with a nozzle with large holes.

Add potatoes to the total liver mass. Immediately put spices and sour cream, add wheat flour, making the dough. Stir it until smooth.

We heat a little refined oil in a frying pan. We spread the liver dough with potatoes with a spoon. Fry on the first side, then turn over and cover the pan. Cook for three minutes covered.

If there is a lot of dough for liver pancakes, then it can be frozen by placing it in a container. After thawing, you will need to add 1-2 tablespoons of flour and fry. But it is better to freeze already cooked pancakes. In this case, there will always be a dish for a quick breakfast or lunch at hand, which will replace the sausage on a sandwich and is perfect for any side dish.
