At what point did you realize that you would be in the restaurant business, because you are a lawyer by training?

I knew that I would be in the restaurant business already in my fourth year at the university. By that time, my friends and I were trying to open our own club, then I started catering. But even a year and a half ago I could not imagine that I would be engaged in the confectionery business.

And yet, how did you come to this?

Desserts used to be secondary to me. Somehow I had an idea to open a macaroon shop in Kyiv. And I chose a school, the highest national school of France, and went there. And so gradually my teachers turned it from a small hobby into a big passion. After school, I already clearly understood how a hobby can be turned into a successful business in Kyiv. Because I realized that this is new, unusual and this is a good business that gives people happiness and joy.

Surely it was not easy to study in Paris?

I remember the first week learning how to make cakes. It was a complete nightmare: I didn’t understand at all what I was doing here, what was happening, where to pour what, what spoons to take. Like a samurai in a war - everyone is a stranger, everyone is against me. And the funny thing is that my teacher, who later became my friend, called all the kitchen items in French, and it was a brain explosion. But somewhere in the second week, when I had already entered the familiar atmosphere and had already figured out a little about everything, I had both patience and a desire to cook.

What do you think is the secret of your popularity and success?

Perhaps some popularity brought me participation in series, films and publications in magazines. But basically, I think I'm successful because I'm really passionate about this business, and I want to make a good, quality product for people. We specifically bother with the ingredients and bring everything from France.

Who helps you in your business?

Sometimes it’s hard, sometimes I get tired, but I understand that everything depends on me. Fortunately, I have many good assistants, many partners, but basically I just understand that I have to plow and plow.

How do you plan your day?

My day starts at 6:30. After breakfast at 7:30, training in the gym begins. As soon as training ends, I go to work. Then - meetings all day. It all ends at eight or nine o'clock in the evening.

Before, I just went to Kyiv restaurants and told where and what I liked, and where I didn’t. Now I am running a blog where I share recipes on how to do it better, how to fix mistakes and develop further. I have been everywhere in Kyiv, and I am no longer interested. But in Europe, I always upload two or three places to the site.

What is your favorite restaurant in the world?

One of them is Josy-Jo. This is a small family restaurant in France, where they know how to cook meat best. I have never tasted better anywhere in the world. In general, there is a special Michelin guide, and we always choose new places that have appeared. To be honest, we already have so many favorite places that we do not have time to visit new ones.

What are your life principles?

Never deceive anyone, conduct an honest business, produce only a quality product, be decent always and with everyone.

Is there a phrase that always inspires you?

If it doesn't work, try again. Do not give up.

Did you personally manage to do it all at once?

We have difficulties every day, but it's cool. You fight with them, you develop. I understand that I have to go ahead, resolve everything myself, and only then will everything work out.


Nastasia Stepula: Where did you put your dog? (Valera had a husky dog ​​for a long time, which at one time was the star of his instagram. - approx. ed.).
Valery Sozanovsky: I started it in order to instill a regimen for myself after a period of endless parties. It was a difficult period, and I understood that in order to train myself, I need to do it in a company. I took a husky with whom we lived for a year and a half, but from my apartment, from my constant absence and from visiting dog hotels, she became depressed. I came to the conclusion that she needs to live in nature, and gave her to a private nursery, where I visit periodically.
AS: I remember that at school you were a rosy-cheeked fat man and were not fond of sports at all. And suddenly a healthy lifestyle, daily workouts, a dog… What happened?
VS: I wasn't fond of it, but then I realized that I get regular rejections from girls - a broken heart, that's all. I decided that I needed to get myself in shape. At first it was a very unorganized format: on Friday I swayed, on Saturday I got drunk, then I missed two weeks in a hangover. I realized: if I want to achieve a result, alcohol does not roll. Therefore, I decided to switch myself completely to sports and a healthy diet.
AS: Did you practice any steroid supplements?
VS: Of course! But a little later. Just kidding, in fact, I went into a very strict regimen with normalized sleep and proper nutrition. It was hard, but now I'm already collecting "dividends" - good health, organization, and brains work better. After I built muscle, I realized that I needed functional training: martial arts can come in very handy in conflict situations, although I'm not aggressive.
AS: Did tattoos as part of the image of a severe macho appear after the muscles?
VS: No, I got my first tattoo at the age of 15, and then it took off: I was looking for meanings, inventing a picture in my head, and the master was already embodying it.
AS: Do you not believe in any spiritual meanings of images?
VS: No, I'm generally an agnostic. But I don’t blaspheme, everything in moderation. Because of the tattoos, they called me Russian Mafia in France - I didn’t argue, I made fun of myself too.

AS: What happened to you that you switched from DJing and 24-hour parties to a strict regime with a rise at 6 in the morning?
VS: I got bored at the age of 20. I realized that the same thing happens all the time. Every time I came to a new party, I already knew in advance how and what would happen - how I would get drunk, with whom I would leave. Plus, I developed an interest in money: what dad gave was not enough, I wanted some kind of trips, shopping. I didn't like being in control of my finances and I switched. I decided that it was time to plow - to work and come up with something of my own. In addition, I then met with a girl older than me, who convinced me that DJing is bullshit, and directed me on the right path.
AS: Here you are standing behind the DJ console, drinking whiskey and cola, and enlightenment comes to you: “It's time to plow”?
VS: No, at the DJ booth I met the Germans, who opened the Prime club in Kyiv, and they didn't play it. They offered me and my friend Max to rent it and develop it.
AS: I remember Prime being there once when you called for the opening and would never want to be there again. It seems that the main motto of the institution was "Hardcore, only hardcore".
VS: Yes, yes, it was a very tough place for students with beer. But it brought us crazy money: in my car, the glove compartment was littered with cash and sometimes it didn’t even close. We were only 19 years old, and we gave part of the proceeds to our parents, because at first we borrowed from them. This went on for six months, until the Germans realized that things were going great with us, and began to demand more money. It all ended with a gang fight.
AS: Was that your first experience of negotiating?
VS: Yeah, they sent bandits and we sent bandits. I remember going into a club, and there are a bunch of bald goril-like types around, and I'm so small: "Hello." As a result, we went to the world and left the club. But in six months we recaptured it, and for me it was a living experience in the restaurant business. Then I realized what I wanted to do, I realized that I like the restaurant business, and everything from the selection of forks to the development of the menu, and I started catering at my father's film studio. Under my father's supervision, I began to rehabilitate the Soviet canteen, and it was quite simple: then some series was being filmed, there were always customers. Then I already wanted something completely my own, and in terms of management, I came up with Quickly. In principle, it went well, but the moment came when it was necessary to replicate it, make it massive, and this meant that it was necessary to look for funding somewhere. Yes, and I was fed up with it by that time: a very specific contingent, and earnings are far from the scale I need. Frankly, in this business, I acted as a bad manager: I was small and not strict enough with the staff. To start the confectionery business, I sold the car and opened my own workshop, invested about 50 thousand dollars. I immediately started working on recipes, and for the first three months I did everything myself. Of course, the process was very slow. Only when something edible began to turn out, I began to assemble a team. And the first delicious pasta I got only for the 9th month. And now I have been making sweets for two years.
AS: Have you already bought a new car?
VS: Yes.
AS: So it turned out to be a successful investment?
VS: Definitely yes, I had enough for the Range Rover.
AS: Did a higher education in the field of jurisprudence somehow come in handy?
VS: I studied very badly. Losers always become cool dudes.
AS: Do you consider yourself a cool dude?
VS: Not yet, but that's the plan. I say, "become".
AS: Are you satisfied with yourself, have you already earned your first million dollars?
VS: Not yet, soon!
AS: So you are such an enviable groom?

VS: Real love. We met at The Burger: I went over to treat her to my new eclairs like a real pick-up master (laughs) and she gave me her phone number. VS: She has already published 5 books with stories, and now she is finishing her master's degree in psychology. She lives across from me, we don't have as close a relationship as I do with my father, but I try to have lunch or dinner with her every Sunday.
AC: Did your parents' divorce hurt you?
VS: At some point, I realized: if my father is better off otherwise, let him, this is his life. And he tried to support his mother. It was hardly an injury, but I began to be more careful in choosing my girls. I believe in love for life and marriage for life. Otherwise, it seems to me that there is no point in living and dating. Therefore, I want to find "the one", if I may say so.
AS: So why haven't you got married yet, after all, there have already been a lot of dates?
VS: While I decided not to bother about it, I'm more interested in business. Surely, when a woman stimulates, it all happens cooler and faster.
AS: But you always have someone to stimulate you, don't you?
VS: Of course! I do not position myself as a ladies' man, but it happens. I really want people to associate my name with quality and good taste. I want to be Ukrainian Jamie Oliver, so that people come to my name, not limited to a candy store. I build my story on a different image - a person who travels to Europe, studies, brings new products, loves his job. I will conduct master classes, soon I will be releasing three books on near-culinary topics at once (one of them is co-authored with a TV presenter who is also associated with restaurant service), I want to make a TV project on this topic, and the “enviable groom” and womanizer - it happened in as a bonus. AS: And how do you feel about children, girls with children?
VS: I would like to have children, and if the girl I love has children, I don't see anything wrong with that.
