For a long time, one retiree went to her, a man no longer young, but at that time - a worthy option. And every time, when he came to visit, he brought me and my sister a gift - still hot appetizing pies with potatoes, rice, jam, meat and even cabbage wrapped in a newspaper. I don't know who fried them, but they were incredibly tasty! Other children are waiting for sweets and sweets, and Olya and I were waiting for Nikiforovich to eat pies.

A few years later, my aunt left this village and moved closer to us, but she still lives alone. And she cooks fried pies from amazingly tasty dough herself, and I come to her with pleasure for tea and for memories.

The dough is so simple, so tender and so tasty that even a beginner in the culinary business can cook it. But the pies are simply divine!
The recipe is designed for 15-16 pcs.

Ingredients:
- kefir - 300 ml,
- wheat flour - 350-400 g,
- vegetable oil - 3 tbsp. l.,
- sea or rock salt - 1 tsp,
- baking soda - 1 tsp,
- granulated sugar - 1 tsp,
- mashed potatoes for the filling or another filling of your choice.

Recipe with photo step by step:

First of all, we warm up a little kefir so that it is at body temperature, otherwise the soda will not react with it, and this will affect the quality of the dough.
Next, pour kefir into a bowl and pour in soda, mix until the mass bubbles to saturate it with oxygen. Then add sugar and salt, mix well until dissolved.
Pour in 1.5 tbsp. refined oil. This is a very important point - unrefined oils are good for health, but they absolutely cannot be used for baking. Such a dough will have a more viscous consistency, as a result, it will not bake.

Lastly, add the sifted flour.

We do this partially and at the same time add the rest of the oil and knead the dough until smooth.
We form a small ball and leave the dough to rest.

After half an hour, knead the dough again. Cut into pieces.
We roll each piece of dough into a cake, in the center of which we spread the filling.

We connect the edges, carefully close up and form a pie.

Fry them on both sides in a hot pan until golden brown.

last time we cooked

Probably, not a single store-bought pastry can replace homemade pies with apples, cabbage, cottage cheese, meat, potatoes, jam and mushrooms. And if traditional pies with yeast dough require time and skill, then even novice cooks can do kefir pies.

Our housewives always have the products for their preparation at hand: there is no kefir - it can be replaced with curdled milk, there are no eggs - you can do without them. No desire to fiddle with the oven? Just fry the pies in a pan.

The technology for making kefir pies is extremely simple: mix all the ingredients, knead the dough and leave it to “rest” for a while. In the meantime, you will have time to prepare the filling. Then make a sausage out of the dough, cut it into pieces and make cakes out of them. Put a little of the prepared filling on each cake and form pies. Leave them for a while to rise, and then fry them in a pan or bake in the oven. 10 minutes after the start of baking, brush the pies with a beaten egg. They will turn out very ruddy and appetizing.

By the way, kefir pies can act not only as a dessert, but also as a full-fledged snack if they use an unsweetened filling. The most important thing is that the products are of high quality and fresh. The quality of flour, for example, is quite simple to determine: good dry flour does not roll into lumps, but pleasantly crunches between the fingers. Of course, it is better to give preference to premium flour, but if there is flour of the first or second grade, it does not matter, add a little starch to it before cooking and sift. The airiness and tenderness of your pies will directly depend on this.

You can use any kefir for making dough. Kefir with a high percentage of fat will make your pies more satisfying, and the dough will rise faster. Do not use cold kefir for cooking, let it stand for a while at room temperature. If your recipe contains yeast, the fresher it is, the better. It is very important not to brew them, but to stir them in kefir. If you decide to fry the pies in a pan, put them on it with the seam down, but on the baking sheet, the pies are stacked the other way around - with the seam up. To make your pies cooked nice and even, raise the temperature in the oven gradually, while placing the baking sheet itself in a preheated oven.

However, enough theory, let's get down to practice and cook excellent pies on kefir!

It is much easier and faster to do on kefir than a yeast base. That is why we decided to devote this article entirely to this topic.

We make quick dough on kefir for fried pies

There are many cooking options, but the fastest and easiest is the one that involves the use of kefir. However, it should be noted that such a base is more suitable for fried products. If you need to bake, then we suggest making a base using yeast.

So, we need:

  • light flour sifted - from 3 glasses.

We knead the base

Fried dough is easy and simple to make. First you need to pour the fermented milk drink into a bowl and warm it up a little over very low heat. After that, the dishes must be removed from the stove and put baking soda into it. Intensively mixing the ingredients with a large spoon, you should wait until the kefir stops foaming. Next, you need to add salt and sugar to it, and also pour in without aroma. At the end of the process, it is required to put light flour, previously sifted in a sieve, into the base.

As a result, you should get a very soft and slightly sticky dough for kefir fried pies, which should be covered with a thick napkin and left warm for ¼ hours.

How to make pies?

The dough for molding is very good. To form products, it should be plucked from a common base, and then rolled into a not very thick, but not thin cake. In the future, any filling is required to be placed in its center. After this, the edges of the base must be strongly pinched with your fingers.

Fry in a frying pan

Delicious dough for fried pies on kefir is cooked very quickly on the stove. Moreover, after heat treatment, it becomes lush, soft, ruddy and very tasty.

Before you start frying the pies, you need to pour a sufficient amount of fat (vegetable) into the pan. The ideal option would be if the oil covers the bottom of the dish by 1 or 1.5 centimeters. After the pan has warmed up sufficiently, all the pies made on a kefir basis should be laid out in it one by one.

After frying one side of the products, they need to be turned over and cooked in exactly the same way. It should be noted that such a dough does not absorb a lot of oil, and therefore the pies are not very greasy.

Cooking dough for fried pies on kefir and yeast

Now you know how kefir dough is made for fried pies. However, it should be noted that it can be prepared in another way. In this case, you will need a bag. Using this ingredient, you will get a more fluffy and tender dough that will make the pies more beautiful, tasty and satisfying.

So the ingredients are:

  • store-bought kefir with a fat content of 2.5% - 2 full glasses;
  • sunflower oil without aroma - ½ cup;
  • medium-sized white sugar - a large spoon;
  • dry yeast - a small bag;
  • iodized salt - dessert spoon;
  • lightly sifted flour - from three glasses.

Knead the kefir-yeast base

Before kneading the dough for fried pies, you need to prepare the dough. To do this, you need to pour the fermented milk drink into an iron saucepan and heat it up a little over minimal heat. Next, white sugar should be completely dissolved in kefir, pour in the whole bag of dry yeast and put a couple of large spoons of flour. After mixing all the ingredients with a spoon, they must be covered with a towel and left near the hot batteries for half an hour. After this time, you should get a fluffy and airy dough, into which you should pour in flavorless sunflower oil, and gradually add salt and all the rest of the flour.

As a result of mixing the components, you should get a soft dough that sticks a little to your hands. In order for it to reach the desired state, it must be covered with a lid or some kind of rag, and then left in a warm room for 40 minutes. After the specified time, the dough will rise well and become completely suitable for sculpting pies.

How to form products and fry them in oil?

Sculpting pies from a kefir-yeast base should be exactly the same as in the previous recipe.

Prepared semi-finished products must be put in boiling vegetable oil and fried on both sides until browned. As a result, you will get very lush and tasty pies, which should be immediately served to family members along with a cup of sweet tea.

Making batter for pies

Have you ever made batter for fried kefir pies in a bread machine? The recipe for such a base will be presented to your attention right now.

So, we need the following products:

  • store-bought kefir with a fat content of 2.5% - a full glass;
  • fresh medium-sized eggs - 2 pcs.;
  • iodized salt - ½ dessert spoon;
  • medium-sized white sugar - a small spoon;
  • table soda - a small spoon is incomplete;
  • lightly sifted flour - 2 cups.

Mixing process

A bread maker is a very useful device for housewives, in which you can not only bake delicious homemade bread, but also cook any dough. To make a base for pies with it, you need to put all of the above ingredients into a bowl, and then set the kneading program for the time you need.

After the specified period, the dough will become homogeneous and of the consistency that you need. After that, it can be safely used for making pies.

How to fry?

Frying pies from batter is quite easy. First, in a hot frying pan with oil, you need to put a large spoonful of the base and distribute it in the form of a cake. Next, you need to place the filling on it and cover it with dough again. After frying the bottom of the products, they should be turned over and cooked in the same way.

I really like to cook various pies, bread or pies from dough, so I collect all the most interesting recipes and periodically try them in practice. Today I want to offer you a simply amazing dough for kefir pies. I already have one favorite dough - yeast, recipe, now there will be another one, on kefir.

After all, as it sometimes happens with us, there is kefir left and you don’t know what to cook from it, or your family asks for pies, the yeast has run out, or vice versa, there is no kefir. For such cases, I have proven dough recipes for fried pies, both with yeast and kefir, in general, for all occasions, as they say.

I share the recipe, I think it will come in handy for you and more than once will help out. The dough turns out to be very tasty and soft, and the composition will pleasantly surprise you - you can say almost from nothing.

Dough for pies on kefir

Products:

  • Kefir - 0.5 l
  • Vegetable oil - 1 tbsp
  • Sugar - 1 tsp
  • Salt to taste, I take about 0.5 tsp
  • Soda - 0.5 tsp
  • Flour - about 3-3.5 tbsp

Cooking:

Kefir is slightly heated, add salt, sugar, soda, vegetable oil to it, mix well. We begin to gradually add flour, you may need a little more of it or vice versa a little less than I indicated.

Knead a soft dough, it is very pleasant to the touch. The main thing here is not to overdo it with flour. You don’t need to knead for a long time, it’s not yeasty, I knead for 5 minutes.

Cover with a towel and leave it for 30 minutes.

After 30 minutes, cut off a piece of dough, divide it into equal parts.

We roll out the cakes, put the filling.

We pinch the edges and form a pie.

As soon as enough has been stuck, you can start frying. Fry in vegetable oil on both sides.

I got about 34-36 pies in total. They remain soft the next day, try it, I think you will appreciate this dough for kefir pies. Delicious and not hard.
