At what point did you realize that you would be in the restaurant business, because you are a lawyer by training?

I knew that I would be in the restaurant business already in my fourth year at the university. By that time, my friends and I were trying to open our own club, then I started catering. But even a year and a half ago I could not imagine that I would be engaged in the confectionery business.

And yet, how did you come to this?

Desserts used to be secondary to me. Somehow I had an idea to open a macaroon shop in Kyiv. And I chose a school, the highest national school of France, and went there. And so gradually my teachers turned it from a small hobby into a big passion. After school, I already clearly understood how a hobby can be turned into a successful business in Kyiv. Because I realized that this is new, unusual and this is a good business that gives people happiness and joy.

Surely it was not easy to study in Paris?

I remember the first week learning how to make cakes. It was a complete nightmare: I didn’t understand at all what I was doing here, what was happening, where to pour what, what spoons to take. Like a samurai in a war - everyone is a stranger, everyone is against me. And the funny thing is that my teacher, who later became my friend, called all the kitchen items in French, and it was a brain explosion. But somewhere in the second week, when I had already entered the familiar atmosphere and had already figured out a little about everything, I had both patience and a desire to cook.

What do you think is the secret of your popularity and success?

Perhaps some popularity brought me participation in series, films and publications in magazines. But basically, I think I'm successful because I'm really passionate about this business, and I want to make a good, quality product for people. We specifically bother with the ingredients and bring everything from France.

Who helps you in your business?

Sometimes it’s hard, sometimes I get tired, but I understand that everything depends on me. Fortunately, I have many good assistants, many partners, but basically I just understand that I have to plow and plow.

How do you plan your day?

My day starts at 6:30. After breakfast at 7:30, training in the gym begins. As soon as training ends, I go to work. Then - meetings all day. It all ends at eight or nine o'clock in the evening.

Is it true that you yourself do not eat sweets?

In Kyiv, I taste desserts from every batch, but when I go to Europe and get into a confectionery, I collect everything to try, and be sure to take pictures of everything.

You blog, tell us about it.

Before, I just went to Kyiv restaurants and told where and what I liked, and where I didn’t. Now I am running a blog where I share recipes on how to do it better, how to fix mistakes and develop further. I have been everywhere in Kyiv, and I am no longer interested. But in Europe, I always upload two or three places to the site.

What is your favorite restaurant in the world?

One of them is Josy-Jo. This is a small family restaurant in France, where they know how to cook meat best. I have never tasted better anywhere in the world. In general, there is a special Michelin guide, and we always choose new places that have appeared. To be honest, we already have so many favorite places that we do not have time to visit new ones.

What are your life principles?

Never deceive anyone, conduct an honest business, produce only a quality product, be decent always and with everyone.

Is there a phrase that always inspires you?

If it doesn't work, try again. Do not give up.

Did you personally manage to do it all at once?

We have difficulties every day, but it's cool. You fight with them, you develop. I understand that I have to go ahead, resolve everything myself, and only then will everything work out.

A few hours ago, I told you about the change of presenter in the morning show "Rise" on the New Channel. Some details have surfaced. The guest of today's broadcast was a restaurateur and the hero of the new series "KA $ TA" Valery Sozanovsky, whom Yulia Dovgan called an enviable groom and asked if he had a girlfriend.

Valera said that he was not dating anyone, but he just had a cool idea and, they say, come on, Yulia, I will meet with you. He stunned the girl and immediately put forward a condition - Dovgan should quit her job at "Rise" due to a busy schedule. Valera saw all this, saw my rises at 3-4 in the morning, preparation for the broadcast until one in the morning and the result that took place in the project. That's probably why he did what he did. So, somehow the stars formed in the sky, that is, it should have been so.

I have been thinking about my own tourism project for a long time, but I never got around to implementing it because of the busy schedule. I will start working on it from Monday.
