Today, with a very modest budget, I managed to cook six different dishes.

1. Chicken breast skewers.

So, how can you prepare a festive table for 10-20 people at the rate of 1000-1200 rubles.

First, a shopping list.

I bought everything in one place, but if you set out to reduce the amount of the purchase, then it might be worth going to specialized stores.

plus to it:

20 tartlets for 6 rubles - 120 rubles.

0.5 l of milk, skewers, garlic, adjika, chili sauce.

So let's get started.

Cut up 5 chicken breasts. Separate the fillet from the bones.

Cut into 100 pieces (each breast respectively into 20 pieces).

Peel two onions (I have a white onion). Grind on a coarse grater.

With the same grater, remove the zest from the lemon and squeeze out all the juice.

Add spices, a teaspoon of salt, two tablespoons of vegetable oil.

Stir and refrigerate for 2-3 hours.

Remove the skin from three legs with a stocking.

Separate the meat from the bones and cut it into small pieces.

Pour the remaining bones from the legs and breast with water, salt and cook over low heat.

When the bones are well cooked, cool them. Then separate the remaining chicken meat from the bones. There will be enough of it.

Salad pepper of two types. Two large red peppers, and 5 small green ones.

Rinse the red pepper, cut in half and remove the seeds and stalk.

Finely chop half of the pepper.

With the other three halves, do this: cut the smooth flesh into large pieces, often chop the rest finely as well as at the very beginning.

Set aside large pieces of pepper (25 pieces). And add small pieces to the chopped meat from the legs.

Adyghe cheese. Separate 1/3 and set aside separately. Cut the remaining 2/3 into small cubes.

Mix together finely chopped leg pulp, Adyghe cheese, red salad pepper. Add one raw egg and a teaspoon of salt. Mix well.

Stuff the chicken legs with the resulting filling, fasten the holes with toothpicks.

Transfer the legs to a saucepan, cover with cold water, lightly salt. Cook over low heat after boiling for another 40-45 minutes. Then cool.

Remove the toothpicks from the cooked, cooled chicken legs and carefully cut into slices.

Cut the fish fillet into thin sticks. Add 2 teaspoons of prepared adjika and stir gently.

Remove the fish from the refrigerator.

Knead the dough: half a liter of milk, two cups of water, salt, sugar, a pinch of soda, 2-3 tablespoons of vegetable oil, 2 eggs and a pound of flour.

Fry 20 thin pancakes.

By the way, the best device for flipping pancakes in a pan is a Chinese stick. Try it!

Separate 1/3 from hard cheese. Save most of it for the salad.

Grind a smaller piece of hard cheese and the remaining piece of Adyghe cheese on a grater.

Add finely chopped green onions (2-3 feathers).

Grind the boiled chicken meat (from the bones) with a knife.

Transfer to bowl with cheese. Add a teaspoon of chili sauce.

Stir the filling.

Stuff pancakes and roll up.

Cut each pancake in half diagonally.

I cooked "for export" so I immediately packed everything in a container or under a film.

For salad:

Cut the green salad pepper into strips and steam with a little water.

Clean and boil the squid. Cut into strips. Add 2/3 hard cheese chopped on a coarse grater, 2-3 cloves of garlic passed through a press, finely chopped green onions, steamed salad peppers.

Season with mayonnaise and stir.

Then fill the tartlets with this salad. But just before serving.

Thread the marinated chicken breast onto 20 wooden skewers, 5 pieces per skewer.

Place on a wire rack and bake in preheated oven for 30 minutes. Not more. Do not wait for the chicken to brown - otherwise dry the skewers.

From the remaining half kilogram of flour, pour a portion (about 4 tablespoons) onto a plate - for breading.

Pour the rest of the flour into a deep bowl. Add two raw eggs, a teaspoon of salt. Pour in half a liter of light weak beer.

Mix the batter well with a whisk.

From a whole liter bottle of vegetable oil, you should have more than 3/4 left. Pour the oil into a suitable pot or saucepan (I use a wok). And heat up for deep frying.

Bread the fish pieces in flour, then dip in batter and deep-fry.

Remove from oil with a slotted spoon. I got 40 pieces.

And lastly, sandwiches.

Hard boil the remaining 5 eggs (out of a dozen).

Salad pepper, cut into large pieces, bake in the oven.

Cut two rye loaves, two fresh cucumbers and almost 400 grams of half-smoked sausage. You should have 25 pieces (slices). Each boiled egg is also cut into 5 parts.

Brush slices of rye loaf with butter.

On top of the butter - a slice of cucumber.

Parsley sprigs - so that they protrude a little to the side.

Pieces of sausage.

Arrange slices of roasted lettuce on top of the sausage.

Pierce the sandwiches with skewers strung with pitted olives.

I cooked from 8 am to 2 pm, slowly, with breaks for coffee and chatting on the phone

Addition

A light but hearty summer salad. Looks very elegant on the holiday table.

For 8 servings you will need:

700 grams of squid

4 small salad peppers

Salt for cooking squid

150 grams hard cheese

2-3 garlic cloves

1 small bunch of green onions (4-5 stalks)

mayonnaise or salad dressing

Boil for salad and cut into rings.

Grind the cheese on a coarse grater.

Finely chop the green onion feathers, holding the knife obliquely.

Cut the lettuce in half. Remove the stem and seeds.

Cut into strips.

Transfer to a saucepan, add half a glass of water and simmer, covered, until all the water has evaporated. Then cool down the pepper.

Put the squid rings, grated cheese, green onions and cooled peppers into a deep bowl. Add minced garlic.

Season with ready-made salad dressing or mayonnaise.

Stir and refrigerate for 30 minutes.

Pink salmon in beer batter

A fish prepared in this way is good for a festive, and especially a buffet table. It is always eaten very quickly and with pleasure and looks very elegant. The pieces are small, and even dieters are tempted to eat a piece.

For 6-10 servings you will need:

2 fillet halves from one pink salmon (about 800 grams)

2 tablespoons Caucasian adjika

6-8 tablespoons flour for breading

for batter:

500 grams of premium flour

0.5 liters of light weak beer

2 eggs

1/2 teaspoon salt

for deep fat:

1 liter refined vegetable oil

Separate the pink salmon fillet from the skin and cut into sticks 4-5 centimeters long, and about 1-1.5 centimeters wide and high. Lubricate the fish pieces evenly with adjika.

Prepare the batter. In a deep bowl, whisk together the flour, eggs and beer. Salt. Leave for 20 minutes for the gluten to swell. The dough should be as thick as sour cream.

Heat vegetable oil in a small saucepan.

Take fish pieces one at a time. Roll on all sides in flour. Dip in batter. Take out of the batter and let the excess dough drain. Dip in fryer. Try not to drop too much at once. The battered fish pieces should float freely in the oil without sticking to each other. Fry the fish in batter on both sides. In a well-heated oil, the pieces should immediately float up and the dough should “swell”. You need to fry no more than 5-7 minutes on each side. Remove the fish from the oil with a slotted spoon and be sure to put it in a colander beforehand. And then shift, simultaneously separating drops of fried dough - they will only spoil the look of the finished dish.

Such a dish is usually served either on a common large plate or on portioned plates - laying out a "hut" and eating with your hands. If you are cooking for a buffet table, you can stick skewers or toothpicks.

Stuffed chicken legs (boiled)

Legs stuffed with pepper and cheese are one of my favorite dishes. According to the method of preparation - boiling and natural gelling - it can also be attributed to galantines.

For 4-8 servings you will need:

2 large chicken legs with whole skin, about 500 grams each

1 raw egg

1 large red lettuce pepper (or different colors)

200 grams of Adyghe cheese

1/2 teaspoon salt

Rinse well-thawed chicken legs, carefully remove the skin from them, chop off the bone at the base.

Remove the meat from the bones and cut it into small pieces.

Remove stem and seeds from lettuce peppers. Cut the pulp of pepper and Adyghe cheese into small cubes, add chopped chicken meat, raw egg and salt. Mix well.

Fill the "stockings" removed from the legs with the resulting mass, fasten the holes with toothpicks.

Lay the stuffed chicken legs on the bottom of the pan and fill with water so that the water covers the chicken legs only 1-2 centimeters.

Bring to a boil and lower the heat. Cook at a very low boil for another 40 minutes.

Cool the chicken legs without removing from the broth. Then take out and remove the toothpicks.

I usually make this dish ahead of time and leave it overnight in the fridge.

Before serving, cut the chicken legs into slices of 1-1.5 centimeters thick and arrange on a dish.

Looks very elegant.

There is one more small addition. A couple of times I made a mistake in choosing the legs for this dish. Their peel had holes through which my filling fell out. Then I wrapped each stuffed leg in several layers of cling film. Then she filled it with water and put a plate on top, and a jar of water on it: an impromptu press was obtained, which did not allow the film to unfold during boiling. Under it, it is necessary to cool the legs.

Remove the film from the cooled chicken legs. Cooking "under the film" will not affect the appearance or taste.

    4. Chilled boiled chicken fillet cut into strips, season with pepper and curry;
    5. Cut the sweet pepper into cubes, chop the pistachios with a knife;
    6. Mix cottage cheese with pistachios, sweet pepper, parsley and corn. Salt the mass to taste;
    7. Put the prepared filling on the cheese layer, distribute evenly. Roll up the roll and wrap it in food foil. Place in the refrigerator for 3-4 hours;

    1. Boil the peeled shrimp in salted water (no more than 3 minutes). Throw away in a colander. Cool down;
    2. Wash, peel and grate apples, sprinkle them with lemon juice;
    3. Wash cucumbers and carrots, peel and also grate (preferably on a grater for Korean carrots). As an option, carrots can be pre-fried in vegetable oil;
    4. Put cucumbers, carrots, apples in layers in bowls or wine glasses. Lubricate all layers with mayonnaise;
    5. Lay the shrimp in the top layer (small ones do not require chopping, large ones can be cut into 3-4 parts);
    6. Decorate the salad with herbs and cool slightly.

A very elegant, hearty salad will effectively decorate the festive table. It is based on simple, affordable products. And the main "trick" - in the design. If we are talking about a festive menu for 15 people, it is better to prepare two separate servings of salad - let two bright slices of watermelon flaunt on the table.

Ingredients for 2 individual servings:

For the base:

  • 1 kg chicken fillet;
  • 2 cans of pickled champignons;
  • 2 pcs. medium carrots;
  • 14 pcs. chicken eggs;
  • 600 g of cheese;
  • mayonnaise;
  • salt (to taste).

For decoration (top layer):

  • 3 pcs. cucumber;
  • 5 pieces. tomato;
  • 8-9 olives.

Cooking process:

    1. Cool the chicken boiled in salted water, finely chop;
    2. Eggs and carrots also boil and chop into small cubes;
    3. Cut mushrooms into small pieces;
    4. Cheese grate on a fine grater;

  • 900 g chicken fillet:

  • 750 g sour cream;
  • 450 g of hard cheese;
  • 150 g butter;
  • 6 tbsp flour;
  • vegetable oil (for frying);

Cooking process:

    1. Cut well-washed, dried mushrooms into thin plates and fry in vegetable oil, drain;
    2. Beat the chicken fillet, cut, fry in a pan until half cooked (without the formation of a golden crust);

Ingredients:

  • 1.4 kg of ground beef;
  • 700 g bacon;
  • 1 st. chopped onion;
  • 2/3 cup barbecue sauce (homemade or store bought)
  • 24 pcs. crackers;
  • 2 pcs. chicken eggs;
  • 2 tbsp. l. mustard;
  • 2 tsp chili powder;
  • salt, pepper (to taste).

Cooking process

    1. Prepare minced meat, put finely chopped onions into it;
    2. Season the mass with barbecue sauce to taste;
    3. Add mustard and all seasonings, spices;
    4. Break eggs into the meat mass, add chopped crackers (breadcrumbs or crumbs of a dried loaf). Everything is good, mix thoroughly;

    1. Lay out the bacon slices, spread the seasoned minced meat evenly over them in the center. Roll up the bacon slices. Place the resulting roll (or several rolls) on a baking sheet lined with foil or parchment paper (seam down);
    2. Grease the roll prepared for baking again with a little barbecue sauce;
    3. Place the dish in the oven, preheated to 175 degrees. Bake for about an hour;
    4. The finished roll should be allowed to cool slightly, cut into portions.

  1. Poultry (chicken) with oranges oven.

This recipe is versatile. It can be used to cook not only chicken, but also other poultry. This dish turns out juicy, fragrant, very tasty. And it looks great on the holiday table.

Ingredients

  • 1 large chicken (or other bird of your choice)
  • 400-500 g oranges (sweet and thin-skinned);
  • 5 tooth garlic;
  • salt, herbs, honey and mustard to taste.

Cooking process:

  1. Grate the prepared chicken carcass with a mixture of seasonings, spices and salt, coat with honey;
  2. Wash the oranges, pour over with boiling water and then with cold water;
  3. Peel the garlic, cut each clove in half lengthwise;

  1. Put the carcass back down on the prepared baking sheet. Make a pocket on the back side (separating the skin from the meat with your hand). Put orange slices in it. Similarly, make a pocket from the bottom of the carcass (from the back) and also chop it with orange slices;
  2. Fill the inner cavity with chopped garlic and oranges;
  3. With culinary twine or a strong thick thread, tie the legs of the bird and overlay the carcass on the outside with the remaining orange slices;
  4. Send the chicken to preheated to 180 degrees. oven, bake for about 2 hours, periodically pouring over the juice that stands out. The finished chicken should have a golden crust, and when pierced, the liquid coming out of it should be transparent.

Note:

Cooking process:

  1. Bake well-washed potatoes in the oven until cooked (readiness can be checked with a toothpick);
  2. Cut each potato in half lengthwise, scoop out the flesh with a spoon;
  3. Mash the potatoes with a fork, adding sour cream, egg yolks and salt. Mix everything well;
  4. Grate the cheese on a fine grater, add to the potato mass;
  5. Fill the potato halves with the prepared mixture, apply a pattern on top using a confectionery press with the desired nozzle (or simply lay it out beautifully with a fork). Place in preheated to 250 degrees. oven, bake until golden brown.

  1. Rice with nuts and raisins

This side dish goes well with both fish and meat. And it is prepared quite simply and quickly. For 15 small servings you will need:

  • 3 cups of rice;
  • 2 small onions;
  • 5 cloves of garlic;
  • 7 tbsp raisins;
  • 300 almonds or walnuts;
  • 200 g butter (vegetable or butter);
  • greenery;
  • salt to taste.

Cooking process

    1. Melt a few tablespoons of butter in a large frying pan or cauldron, fry finely chopped onion on it until transparent, add garlic;
    2. Pour rice, mixing well with the toasted mass. Fry it for a few minutes;
    3. Pour in 6 cups of water, add salt and bring everything to a boil. Reduce the heat, leaving the mass to languish for 20-30 minutes (until all the water is absorbed);
    4. Melt a little butter in a separate frying pan and fry raisins, parsley, chopped nuts on it. Fill the rice with the prepared mixture.

  1. Garlic lasagne "Ajada"

This is a very unconventional type of lasagna, for which the sauce is very important. It is he who gives the dish the necessary piquancy and richness. The dish is quick and easy to prepare, and on the festive table it will be more than appropriate.

Ingredients:

  • 3 packs of lasagna;
  • 300 ml of olive oil;
  • 200 g butter;
  • 300 g of Parmesan cheese;
  • 500 g walnuts;
  • 9 cloves of garlic;
  • 300 g breadcrumbs.

Cooking process:

  1. Drop the nuts in boiling water for 5 minutes. Drain the water, peel the nuts and chop, mixing with garlic and breadcrumbs (a rough paste should turn out);
  2. Add olive oil while continuing to beat the mass. You should get a homogeneous sauce. Add salt and pepper to it to taste;
  3. Boil the lasagne sheets in water until half cooked (do not drain the water). Prepare baking dishes by greasing them with butter (at least two forms will be required for this amount of dish). Put a sheet of lasagna, pour a little sauce on it, season with butter and sprinkle with grated parmesan. Repeat the process with all of the lasagne sheets. Top layer - sauce and parmesan;

  1. It is necessary to separately make three servings of protein-nut paste for three cakes. For one cake, take 2 egg whites, beat them into a strong foam, adding a little bit of sugar;
  2. 4 tbsp mix peanuts with 1 tbsp. flour or starch. Gently fold this mixture into the beaten egg whites, mixing from top to bottom;
  3. Put the resulting mass on a baking sheet, level it with a thickness of 5-7 mm (in the form of a circle - an approximate diameter of about 20 cm);
  4. Bake at a temperature of 160 degrees. about 2 hours (you need to make sure that the cake does not dry out, but does not remain wet);
  5. Thus, bake three cakes. It is advisable to let them lie down for 12 hours;
  6. Prepare buttercream. First, cook milk-sugar syrup - pour 85 g of sugar into 50 g of boiling water, after boiling add condensed milk and bring to a boil. Simmer on a low boil for 10 minutes. Cool the syrup;
  7. Beat the butter, after softening it. Add prepared chilled sugar syrup to it in a thin stream, pour in vanillin. You should get an airy, light cream that does not exfoliate.
