Bon appetit and good recipes!

Raspberry jam has always been considered not a simple delicacy or an addition to pies and sweet dishes. It is also a well-known folk remedy for the treatment of colds. There are many different ways to make delicious and healthy raspberry jam, but they are all simple and require few ingredients, the main ones being berries and sugar.

Raspberry jam - a classic recipe

To make your jam really tasty and fragrant, you will have to spend time on it - this is not a very fast business, but the result will definitely please you.

For any raspberry jam, you will need fresh raw materials, ideally freshly harvested. Raspberry - the berry is very tender and, after lying down, quickly gives juice and loses its properties.

For the simplest classic recipe, you only need sugar and raspberries in equal proportions, that is, for a kilogram of berries you need a kilogram of sugar.

  1. The berry must be well cleaned of leaves, dirt, rinsed and only then proceed to cooking. Pour the fruits into a saucepan, pour half a measure of sugar into it and set the dishes aside for 2 or 3 hours. During this time, the berry will give juice.
  2. Next, put the pan on the stove and turn on the heat. As soon as the jam boils, remove it from the heat and leave to brew. Better to let him rest all night.
  3. The next morning, the pot with jam must be put on fire again, let it boil and again remove from the stove. Then you should immediately pour in the second half of the sugar, mix everything well until the grains dissolve and pour the jam into jars.

Confiture prepared according to this recipe is not only tasty, but also healthy. Thanks to this method of heat treatment, the maximum benefit of raspberry jam is preserved, since it is not exposed to high temperatures for a long time. A short boil is needed only to dissolve the sugar and better preserve the jam in winter.

Quick recipe "Five Minute"

"Five-minute" is called jam ... which is cooked in just 5 minutes! This recipe is suitable for making a dessert at the height of the summer season, when in country conditions you don’t want to spend a lot of time at the stove. In addition, this recipe will allow you to save the maximum benefit in the berry.

To execute it, take:

  • kilogram of raspberries;
  • 0.5 kilograms of sugar.

If you have more or less raspberries, proportionally count the right amount of granulated sugar.

It is best to cook jam in an enamel bowl - a saucepan or a basin.

  1. Pour the pure berry into the pan in small layers, sprinkling with sugar. Let the fruits stand for a couple of hours so that they give juice.
  2. Turn on a small heat on the stove and put a pan on it. The berry should warm up slowly so that as much juice as possible flows out of it.
  3. While stirring, let the jam boil and cook for 5 minutes. Stir everything carefully so as not to crush the berries. During the cooking process, foam will form, it needs to be removed, but you should not throw it away - try it, this is a separate delicacy.

Raspberry is a very tasty berry, sweet and juicy. Its huge minus is that it cannot stand long transportation and cannot be stored at all, collected in the evening - it can deteriorate in the morning. These recipes will not take much of your time and it is quite possible to make them in the evening, after a busy day at work. There will be no constant stirring and tracking, but the sterilization of jars and lids should still be done - the berry is also very capricious.

Raspberry jam for the winter without cooking, a simple recipe

Raspberries are an extremely useful berry, and not only for colds, although this is how we most often use it. Fresh or grated raspberries with sugar remove toxins, promote the regeneration of body cells. It removes excess water from the body, naturally reduces swelling and facilitates the work of the kidneys. Thinning the blood, it prevents the occurrence of blood clots, which is very important after 45 years. With regular use, the skin will be cleansed, hair and nails will become stronger and healthier. Raspberries are also very beneficial for women's health. All these useful properties are preserved solely because we will not subject it to heat treatment. Since our raspberries are grated with sugar, girls who follow their figure should take into account the high calorie content of the workpiece.

Composition of products:

  • raspberries - 1.5 kg;
  • sugar - 1.5 kg.

Preparing jam

Jam is stored in a cool place - the bottom shelf of the refrigerator, cellar or basement all winter due to the high sugar content.

Thick raspberry jam with butter and lavender

Lavender for me has always been associated with summer and hot tea in the evening on the terrace. Therefore, when I have the opportunity, I make sure to dry the sprigs of lavender, so that later I can use them as a natural flavor. This unusual, tasty and thick jam will bring you back to summer even in bitterly cold winters.

What do we need:

  • raspberries -1 kg;
  • sugar - 1 kg;
  • butter 82% fat - 20 gr;
  • lavender - 6 tsp

Cooking process

The jam keeps well all winter. If it is well chilled before serving, it will seem even tastier. A great option for a sandwich - tasty, fragrant and healthy. It is also perfect for topping ice cream and pancakes - you have never tried such a combination of flavors! The benefits of this jam are huge - raspberries and lavender have anti-inflammatory and bactericidal properties. This makes your preparation also a delicious medicine in the autumn-spring period.

  • The sugar/raspberry ratio is usually 1 to 1. Raspberries are rarely sour.
  • Raspberries can also be rubbed with a blender, but the consistency is different - more homogeneous and slightly viscous. For those who are used to the classics, the most ideal option for turning raspberries into puree is a wooden pestle.
  • If you are a little worried about the safety of the jam and are afraid that it would not wander in winter, do the following: pour the jam not to the brim so that you get incomplete jars. When it has cooled down a bit, add sugar to each 0.5 cm thick jar. The sugar forms a thick crust that will prevent bacteria from entering.
  • Freezing is another alternative way to preserve grated raspberries with sugar. Simply arrange the raspberries in rectangular containers and freeze. When the mass hardens, put the bricks in a large ziplock bag and store in the freezer.
  • If you have a little berry left that you do not have time to process, scatter it on a flat dish and freeze. And a delicious addition to muesli or an unusual decor for a cheesecake or casserole is always at your fingertips.

Today we have prepared 3 different jam options - one without cooking at all, tasty and healthy. We cooked the other two, but in different ways, the first in a quick way, the second in a gourmet way.

Raspberry jam is the most fragrant, delicious, and most importantly, the healthiest of all winter preparations. In our other articles, we have already written about what a useful and necessary raspberry really is. And since today, before the onset of cold weather, I want to keep a fragrant piece of summer in a sweet, delicious dessert, we will look at a step-by-step recipe with photos of how to cook raspberry jam and whether to cook it at all.

What do you need to make raspberry jam?

To make raspberry jam, we need:

- raspberries 1 kg.

- sugar about 800 g.

For the preparation and cooking of classic raspberry jam for the winter, ripe, intact berries are taken. We remove unripe fruits and sepals that have been entangled in the case. Raspberry - the berry is very tender and soft and does not like excessive sorting. If you picked the berries yourself, or know the place where it grew, you don’t even have to wash it, this will be even the best option.

It happens that the berries are infected with the faces of the raspberry bug. If you notice small white worms, soak the raspberries in 10% saline. Dilute 1 tablespoon of salt in 1 liter of water. Pour over the berries and leave for half an hour. Collect the emerging larvae, rinse the berries to remove the remnants of the saline solution.

Be careful - it is not advisable to wash raspberries under running water, they are too tender for this and can be damaged, use a colander. After that, it is better to let the water drain.

Pour raspberries into a cooking container, basin or saucepan and cover it with sugar and leave for an hour. In order to cook raspberry jam and so that it stands all winter, it is better to take enamelware or stainless steel. If you take aluminum, it will begin to oxidize under the action of natural acids. And such an addition to the jam will not add any benefit. When the berries have let the juice, put them on medium heat.

Sterilization of jars

While it boils, we will sterilize jars for raspberry jam according to my step-by-step recipe, dedicated to this process, but for now briefly.

Clean jars are sterilized without notches on the neck and cracks. Pour water into a small saucepan and bring to a boil. On a boiling pot, you can put a colander, and on top of the jar upside down. Sterilize jars with a volume of 0.5 liters. - 10 minutes, 1 liter. - 15 minutes. Don't forget the lids too. They can be sterilized, just like jars, only 5 minutes are enough for this.

Jars can also be sterilized in the oven. Put clean jars on a baking sheet and put in a cold oven. Preheat the oven to 150ºС and fry the jars over low heat for 15 minutes.

Making raspberry jam

Cook raspberry jam over low heat. Gradually, foam (noise) will form on the mass, which must be removed with a spoon or slotted spoon. This sweet foam is delicious and fragrant.

You can enjoy it or collect it with pleasure, and then add it to porridge and even cook raspberry jelly from these leftovers, as in the photo, which we will soon teach you how to cook. But leaving the foam in the jam is not desirable, so that the air bubbles contained in it do not become a home for pathogenic bacteria.

When the jam boils, reduce the heat to a minimum. Raspberry is tender and there is no need to cook it for a long time. It is enough to boil on low heat for 10-15 minutes. Then it will not lose its pink color or the fragrant smell of raspberries.

You can give raspberry jam a richer, caramel flavor. To do this, boil it longer. Gradually, the jam will become thicker, darker a little and a caramel smell will appear. Just don't overdo it. Keep in mind that the jam will thicken as it cools.

Capping raspberries in jars. Where to store?

Ready jam is poured into dry, warm sterile jars. Close with dry sterilized lids. They twist and check the quality of the capping. Cool in air. Properly brewed raspberry jam can be stored even at room temperature.. And open jars are still better to put in the refrigerator.

How to cook raspberry jam without sugar?

We have all been accustomed since childhood that "jam" is something sweet. But there are people who do not like to consume large amounts of sugars. For people who love the natural berry taste, there is also a recipe for canned raspberries without sugar.

To cook natural raspberries (raspberry jam without sugar), sort, carefully (if necessary) rinse. Let the berries dry out a bit. Pour into dry, sterilized jars. Cover with lids without twisting. Put the jars in a saucepan or other container of water that is convenient for you. Sterilize for 10 minutes. Then twist and check the quality of the capping.

How to make raw raspberry jam? "Vitamin"

I have already written about the benefits and rich vitamin composition of raspberries. It is a natural aspirin and the first helper with colds and viral diseases. In order to use raspberries with maximum benefit, you need to try to keep all of its rich composition intact.

Raw raspberry preservation, which is also called "Vitamin", is best suited for this.

To do this, take:

- raspberries 1 kg.

- sugar 1 kg.

Raw raspberry jam requires more sugar than regular raspberry jam. Because sugar is the only preservative used in this recipe.

Of course, it is better not to wash the berries for the vitamin in order to minimize the ingress of raw water. Sprinkle fresh ripe berries with sugar. Grind raspberries with sugar until smooth.

Such jam is packaged in dry sterilized jars. Pour a tablespoon of sugar into the bottom. Pour the mass to the top and pour a little more sugar on top. Sugar will be an additional barrier that prevents raw jam from souring. Close with sterilized lids.

Such a “Vitamin” raw raspberry jam will help you fight diseases in winter and strengthen your immunity in the autumn-winter period, and dozens of other articles about healthy eating, self-development and much more.
