Kefir (any fat content) - 500 grams;
Premium flour - 2.5 - 3 tbsp. (in a glass 160 grams of flour);
Sugar - 1 tbsp. (about 20 grams);
Chicken egg - 1 pc.;
Vanilla sugar - 1 sachet;
A pinch of salt;
Soda (not slaked) - 1 tbsp. or baking powder (ammonium).

As for kefir, for this recipe it is best to take sour kefir. Fritters come out of it the most magnificent.

Mix the egg, a pinch of salt and sugar in a bowl and beat with a whisk.

In a ladle, heat the kefir almost to a boil. Stir it all the time. Kefir will curl up and turn into flakes - this is what we need.

With a tablespoon, pour the kefir into the egg mixture in a thin stream. Pour a little at a time, and stir all the time so that the egg does not curdle.

Flakes will be visible in the mixture - these are flakes from kefir, do not be alarmed.

Be sure to sift the flour and pour vanilla sugar into it.

Add the egg-kefir mixture to the flour and mix it vigorously until smooth.

At the very last turn pour soda or baking powder (ammonium) and mix again. Air bubbles will run through your test - this is what we need.

The dough for pancakes should be quite thick.

It should not pour out from a spoon, but slowly drain. Do not add all the flour at once - put 2.5 cups first, if you need more, then add. The quality and density of flour is different for everyone. Experience the desired thickness of the dough.

Bake pancakes immediately.
Heat up a frying pan and pour vegetable oil.
Spread the dough with a tablespoon on a preheated pan.
Reduce heat and let brown on one side. There will be a lot of air bubbles on the top.

Flip the pancakes to the second side, make a small fire and cover with a lid for a couple of minutes. Fritters will grow even more in a pan with a lid.
Put the finished pastry on a napkin to absorb excess fat.
Then transfer to a bowl and cover with a lid or bag.
Serve pancakes with sour cream or jam - as you like more.

  • 4 eggs;
  • 8 art. l. Sahara;
  • 2.5 cups flour;
  • half tsp salt;
  • 4 tsp baking powder.

Cooking process:

  1. Beat eggs with sugar and add kefir with salt.
  2. Slowly add flour, stirring occasionally to remove lumps.
  3. AT ready dough add baking powder and stir lightly. Just do not overdo it, otherwise the pancakes will not come out lush.
  4. Fry with plenty of oil in a frying pan with a lid.

By leaps and bounds

  • 1 glass of flour;
  • 1 st. l. Sahara;
  • 1 tsp salt;
  • 1 egg;
  • 1 glass of sour kefir;
  • 3 art. l. vegetable oil;
  • half tsp soda;
  • 3 bananas.

Cooking process:

  1. Mix fermented milk product, egg, bananas and butter in a blender. Try not to have any lumps.
  2. Add sugar, salt, soda and flour to the mass. Knead the dough.

With raisins

If there is no kefir

You can bake delicious pancakes for breakfast, even if there are no fermented milk products in the refrigerator. The dish still turns out very fluffy. And to reduce the calorie content of pancakes, you can make them without adding eggs. You will need:

  • 2 cups of flour;
  • a quarter cup of sugar;
  • 0.3 l of milk;
  • 2 tbsp. l. ghee;
  • a bag of baking powder;
  • salt and vanilla to taste.

Cooking process:

  1. Mix flour, salt, baking powder, vanilla and sugar in a bowl.
  2. Separately, combine warmed non-fat milk with non-hot butter.
  3. Gently pour the liquid into the flour mixture and knead the dough.
  4. Bake in any convenient way.

Cheese based

Unsweetened pancakes on kefir can be baked with various additives. If you want to make a very aromatic dish with salty notes, put cheese in the dough. You will need:

  • 250 g flour;

Chocolate pancakes

  • 300 g of granulated sugar;
  • 50 g cocoa;
  • 1 egg;
  • 5 ml lemon juice;
  • 2 g of soda;

Thanks to the Great and All-Knowing Internet, I finally got the recipe fluffy pancakes on kefir. It may seem strange, but I, an experienced hostess, still could not make friends with pancakes. Yeast ones turn out excellent, and kefir pancakes are not something that would not turn out, but not the same as mom's. And I wanted those.

Mom does not have a recipe as such, she always, as she says, “by eye”. I already tried to tame this “by eye”, but no. I've tried other recipes, but they're delicious. Already reconciled, it means that only mom will have “pancakes like mom's”.

And finally I came across a recipe that interested me, I decided to once more try without hope of success, but it suddenly happened once.

Ingredients:

  • kefir - 0.5 l. (I had 1%, but I think you can use any)
  • egg - 1 pc.
  • salt - 0.3 tsp
  • sugar - 2 tbsp. l.
  • soda - 1 tsp
  • flour - 2.5 cups

How to cook lush pancakes on kefir:

  1. Heat the kefir until it becomes hot. But so that it does not curl up, I constantly, while it was heating up, interfered with the whisk.
  2. Remove hot kefir from heat, add salt, sugar, egg and beat everything thoroughly with a whisk.
  3. Gradually add flour and mix. The dough should be the consistency of a fairly thick sour cream. It took me 2.5 cups of flour.
  4. The final touch in preparing the dough for delicious pancakes on kefir - add soda, but not all at once, but gradually, mixing thoroughly each time. I divided the soda into three doses. Leave the dough for 15 minutes so that all the ingredients "make friends".
  5. We bake pancakes on kefir in a preheated pan, after pouring vegetable oil into it.

Here is such a slide of lush pancakes I got. Our grandson was visiting us, he said that they were delicious. While I was only a mother, there was no recipe for this, so now these pancakes will be "like grandmother's."
